Khaman Pizza

                           Caution::"Highly addicted recipe."
             I'm back again with "Weekend-special recipe". This recipe is for people, who love to eat delicious and jiffy food in weekend so they can enjoy the weekend to the fullest. And as last weekends-special recipe was a hit, trust me this 'khaman Pizza" will rock your weekend once again. 
 
 
 Khaman is a food common in the Gujarat, India. But now Khamans are popular in worldwide and almost everyone's favorite. Same like pizza. Pizzas are most favorite fast food around the world too. And today's recipe is about a combination of both so, so trust me it is a divine, delightful, luscious and mouthwatering fusion recipe ever. It's super rapid. So whoever love to eat Khaman and Pizza, get ready to feel dissipate it on your tongue. 100% satisfying your heart and soul recipe.:)
       Shall we start this awesome recipe?,,,,

Ingredients:
For Khaman;
1 cup Besan(chickpeas flour)
1 tbls Sugar
1/2 tsp Salt
1/2 tsp Citric acid(Nimbu na phool)
2 tbls Oil
1/2 cup Water
1 tbl Fruit salt(Eno)
For Sauce;
2 tbls Oil
1/2 tsp Mustard seeds
Pinch of Asafetida
1/2 tsp Turmeric powder
1 tbls Red chili powder
1 tsp Coriander powder(dhanajeeru)
1 tsp Chaat masala
1 tsp Ketchup
2 tbls Pizza sauce
1 tsp Sugar
1 tbls Chopped cilantro
2-3 tbls Water
For Garnish;
* 1 cup grated mozzarella cheese
Some chopped cilantro
Method:
For Sauce;
* heat the oil in small pot on slow flame.
* Add mustard seeds in it.
* Once mustard seeds start cracked, add asafetida and turmeric powder.
* Add red chili powder, chaat masala and coriander powder.
* Keep strir it.
* Add ketchup in pizza sauce.
* Add sugar and cilantro.
* Mix well.
* Add water and cook till one boil.
* Turn off stove and keep sauce on side.

For Khaman;
* First Boil the water in steamer pot while you making batter for Khaman.
* Take mixing bowl.
* Add besan, salt, sugar, citric acid, oil and water.
* Mix very well till 2-3 minutes for more spongy khaman.
* Grease the round mold trys and keep ready.
* Add fruit salt in batter and mix it well.
* Pour in to round mold trys  and put them into steamer.
* Cove rthe steamer and cook for 15-20 minutes.
* Take out the trys from steamer and let them cool down for at least 5 minutes.
For Serving;
* Take out whole round Khaman from mold try and place on to serving platter.
* Spread the sauce on it evenly.


















* Spread grated cheese on it.
 

















* Sprinkle some cilantro and leftover sauce on it.
* Cook in microwave for about 10-15 seconds.
* Cut in to triangle shape.
 
* Serve it and enjoy it.
NOTE:If you  want to use instant khaman mix packet like Gits, you may use it that for making khaman.

Thai Noodle Sizzler Chaat

       " Some days you just have to create your own sunshine." And I'm back with another fusion of sunshine. It's about "Thai Noodle Sizzler Chaat", name is big and procedure is big too but the  big tasteful recipe ever. This fusion recipe has twist and taste of Thai, Chinese and Indian cuisines. And I suggest this recipe as "must try once" recipe. Lots of things to do for preparation so let's cut out chit-chat here and start cooking now....

                      

Ingredients:
For Thai Paste;
3-4 Dry whole red chilies
1 tsp Cumin seeds
1 tbls Whole dry coriander seeds
2 tbls Lemon juice
1 tsp Lemon zest
1 tsp Lemon grass
1 tbls Grated dry or fresh coconut
1 tbls Fresh cilantro's stems(roughly chopped)
2 tbls Dry roasted sesame seeds
1 tsp Black pepper powder
1 tsp Chaat masala
1 tbls brown sugar(you can use regular)
1 1/2 tsp Soya sauce
1 tbls Oil
Salt as taste.
For Chaat Mix;
1 cup Chopped apple
1/2 cup Chopped bell pepper
1/2 cup Boiled or frozen corn
1/2 cup Chopped tomatoes
1/2 cup Roasted and roughly crushed peanuts
1 tbls Finely grated coconut
1 tsp Black pepper powder
1 tsp Paprika powder
1 tsp Chaat masala
2 tbls Chopped cilantro with stems
For Noodles:
1-2 tbls Butter
1/2 tbls chopped garlic
2 cups Boiled noodels
1 tsp Black pepper powder
1 tsp Crushed dry red pepper(chili flakes)
1 tbls Roasted black sesame seeds
1 tbls Chopped cilantro
Salt as taste.
Method:
For Thai Paste.
* First soak dry whole red chilies, cumin seeds and whole dry coriander seeds together for about 30 minutes.
           
* Transfer this in to grider bowl along with lemon juice,1 tsp lemon zest(keep half for late), lemon grass and coconut.
* Grind all together with little water and make fine paste.
* Transfer this paste in to a bowl.
            
* Add dry roasted sesame seeds, Chaat masala, black pepper powder, sugar, salt, soya sauce, 1tsp lemon zest and oil in to paste.
* Mix well and keep Thai paste on side.
             
* Take another big mixing bowl.
* Add all chaat mix ingredients in it and mix well.
            
* Add Thai paste in this chaat mix.
* Keep aside.
          
For Noodles;
* Heat the pan with Butter.
* Add chopped garlic and let it light brown in color.
* Add boiled noodles in it.
* Add black pepper powder, crushed dry red pepper, roasted black sesame seeds, chopped cilantro and salt.
* Mix all wel and turn off the stove.
            
For Serve;
* Heat the sizzler plate well and arrange noodles on it.
* Put chaat mix on it.
* For sizzler smoke add some drop of vinegar and some butter on  hot sizzler plate after arrange all.(optional)
                              

* Note:: If you don't want to serve as sizzler, you also can mix all together and serve it.
* Note: Dry red chilies are more spicy so adjust according to your taste, But Thai foods are spicy so enjoy.

Oats-Spinach Pakode

    "Calories Don't Count On The Weekend"..
        It's idiosyncratic to me when people around me moan and groan about losing weight. The answer is so obvious and simple. Introduce some balance into your life and your body, your skin, your mind and your spirit will all align themselves perfectly, just like a good head stand. It's always been very important to me to achieve a kind of balance in my and my family's life. These days everyone is interested to eat healthy. As a cook I use cream, oil and butter if dish requires it but I also like to eat with Oats, quinoa, spinach, kale and some more organic fruits and vegetables too. 

      This recipe is one of "My kind" recipe which has oil and also has some oats and spinach, so in short this recipe is balance of healthy food & indulgent food. Pakodas are always favorite to all at any time. I'm sure you will try "Oats-Spinach Pakode" this weekend and will rock your weekend. So don't count the calories this weekend just follow the recipe and forget about bad factor(deep frying), because Oats-Spinach Pakode has more good factor(oats reduce cholesterol) in it....
Ingredients:
1 cup Oats
2 tbls Semolina (Rawa)    
1 cup Besan(Gram flour)
2 cups roughly chopped Spinach
1 tbls  Ginger paste
1 tbls Green Chilli Paste
1 tsp Red Chillie powder
1/2 tsp Turmeric powder
1 tsp dry Mango powder(Amchur)
1 tsp black Pepper powder
1 tsp Taco seasoning powder(optional)
1 tsp Paprika powder
1 cup finely chopped Onions
Salt to taste
1 1/2 tbls fruit salt(ENO) or 1tsp soda bicarbonate (I used eno)
Water to make Pakoda batter.
Oil to deep fry.
For Sprinkle Masala:
1 tsp chaat masala
1 tsp taco seasoning powder
Method:
* Take a big mixing bowl.
* Add oats in it and add some water in oats.

* Mix and rest for about 7-8 minutes.
* Add semolina, chopped spinach, ginger paste, green chilli paste, red chilli powder, turmeric powder, amchur powder, black pepper powder, taco seasoning, paprika powder, chopped onions and salt.
* Mix all together.
* Add water to make pakoda batter and mix very well.
* Heat the oil in frying pan.
* Add fruit salt(eno) in batter and mix well gain.
* Take batter and fry the pakoda in hot oil till half fry.
* Place them on a paper towel and let them cool down.
* Heat the oil again and place all pakoda in to hot oil and fry them again.
* Fry till they are golden brown in color.
* Sprinkle some mixture of chaat masala and taco seasoning on them.
* Serve Oat-Spinach Pakode with garlic chutney or ketchup.

Date-Dry Fruit Balls(Ladoo)

"ॐ विघ्नेश्वरय वरदाय सुरप्रियाय, 
लम्बोधाराय सकलाय जगादिताय।

गौरी सुताय गण नाथ नमो नमस्ते"

Ingredients:
1 cup chopped dates
1/2 cup mixed  crushed dry fruits(Almonds, Cashews, Pistachios & Walnuts)
2 tbls ghee
2 tbls milk
Method:
* Heat the pan with ghee in it.
* Add chopped dates in it and cook till dates get tender, about 5-6 minutes.
* Add milk and mix well.
* Turn off the stove and add mixed crushed dry fruits.
* Mix all and make balls.
* Roll balls in to mixed dry fruits. (optional)
* Serve it and freeze it.

Veg. Loaded Parathas

      I know, vegetables are not very likable in kid's but I also know kids always like Parathas. So let's try to feed them Parathas with lots of vegetables, and I'm pretty sure that they will like it and ask more for this Parathas.
         
Not only kids but all age people would like to eat this Veg. Loaded Prathas any time for sure.
      Parathas are basically from northern side of India, but now with lots of variation Paraths are famous all over in India and overseas too. I love to eat parathas. There are no talks at the table when parathas are on it.. My kids love to eat this Veg. loaded parathas with yogurt. And me and my hubby love to eat with pickle. I usally make a big pile of them that kids can grab and pack them for school's lunch too. Parathas can be eaten as a breakfast or tea-time or lunch and dinner, choice is yours. So get ready to try something new this time.
Ingredients:
2 1/2 cups Wheat flour
1/2 cup Besan flour
1 tbls Oil
1 tbls Ginger, garlic and green chili paste
1 tsp Red chili powder
1/2 tsp Turmeric powder
1 tsp Ajwain
2 tbls Finely shredded carrots
2 tbls Finely shredded beet
3/4 cup Finely shredded cabbage
3/4 cup Spinach puree
Salt according to taste
Method:
* Combine both flour and mix well.

* Add salt, turmeric powder, red chili powder and ajwain.
* Add oil in it and mix.
* Add ginger, garlic and green chili paste.

* Add shredded carrot, beet and cabbage.



* Combine all. 
* Add spinach purée(Boiled and blanch spinach real fast and crush them with out water).

 
*Make dough with the help of purée.

* Make dough like Parathas and add little milk if needed.

* Roll the Parathas with help of dry flour.

* Heat the tawa, place paratha on it. 
* Shallow fry Parathas applying, ghee or oil on both sides.

* Serve Parathas with yogurt and pickle.

Gold Coins

              "Kyun paisa paisa karti hain, Kyun paise pe tu marti hain...Mein barish kar doon paise ki jo tu banale recipe meri...."
  Yes, it's about Gold Coins...
             
      This is secret recipe from my mom, and it's all time favorite in my family so from now I am pretty sure that, this will be your  all time favorite recipe in your family and friends too. My mom used to make these Gold coins when we were kids. I would love to share this recipe with you all because it brings so many childhood memories in front of my eyes just like slideshow.
   By the way, this recipe has more 'nuts and bolts', in short it is a long method recipe but in the end you will achieve so many Gold Coins, so if you want to become a millionaire then little hard work " toh Banta hai"!!!..

      So Who wants to be a millionaire?, just follow the recipe step by step and you will be a millionaire for sure..:). 
Ingredients:
20-25 Bread slices (cut in to round shape)
700 grms Boiled-mashed Potatoes
3/4 cup Chopped onion
1 cup Mix chopped carrots, cabbage, bell peppers, green beans, green onions
1 tbls  Ginger, garlic and green chili paste
1 tbls Soya sauce
1 tsp Vinegar
1 tsp Schezwan sauce(I used Ching's brand sauce)
1 tbls Oil
Salt to taste
For coating:
3/4 cup All purpose paste(all purpose+water+pinch of salt, mix all and make thick paste, it should be of dropping consistency, to coat gold coins)
1 cup Dry bread crumbs
Oil for deep frying
Method:
* Cut the bread slices in to round shapes with the help of round cookie cutter or a lid.
* keep them aside.

For stuffing;

* Heat 1tbls oil in to pan and add chopped oinions.
* Sauté for 1-2 minutes and add ginger, garlic and green chili paste.
* Mix well and add all other chopped vegetables.

* Cook until vegetables gets fairly tender.

* Add boiled and mashed potatoes in it.
* Mix and cook well.
* Add soya sauce, schezwan sauce and vinegar.
* Seasoning with salt and mix well.
* Turn off the stove and let it cool down completely.
* Put about 1-2 tbls of this preparation on each round piece of bread(a bread coin).

* Press little and combine mixture with edges of bread.

* Apply all purpose paste on it.(make sure apply on edges)

* Sprinkle dry bread crumbs on it.

* Keep all Gold Coins in to refrigerator for at least 30 minutes.(Optional) 

* Deep fry in the hot oil.
* Fry upside down and pour hot oil on bottom side.

* Fry until golden brown in color.


* Serve hot with ketchup and green cilantro(coriander) chutney.
