Tindora Parathas

              Hello again, today I am going to share an unique combination recipe of parathas. It's just one kind of variation of stuffing paraths using Tindoras.
           I made simple and comforting parathas featuring Tindora(Ghiloda) as the star ingredient. Perfumed with cinnamon-clove powder and green chilies-garlic paste. Tindora paratha's recipe is jazzed up with some sugar and slightly squeeze of fresh lemon too. this is one of the must try kind of recipe.
            Tindoras are very famous vegetable in India and so many other countries too. Each region of India calls is by names like Tindora, Ivy-gourd, Ghiloda, Tinda, Kovaikkai, Dondaikkai or Tendly. With such a variety, each home has a way of making it too. There are so many ways to make this vegetable, but today I'm going to share some different way to eat these Tindoras. When you are running out of any quick paratha recipe to cook, don't pass out Tindora in the grocery aisle and try this simple, yet delicious paratha recipe. Time to cook now....
Ingredients:
 For dough;
2 cups Wheat Flour
1 tsp Oil
1 tbls Ghee
1 tsp Cumin powder
Salt to taste
Water as required
 For stuffing;
1 bowl Crushed Tindora
1 tbls Oil
1 tbls Green chili and garlic paste(adjust according to your taste)
1 tsp mustard seeds
1 tsp sesame seeds
1 tsp turmeric powder
1 tsp cinnamon-clove powder(adjust according to your taste)
1 tsp brown sugar(you can use any sugar)
Few drops of lemon juice
Salt to taste.
Method:
  For dough;
* In large bowl combine all the ingredients in the wheat flour.
* Knead well with water to form a dough.
*Cover it and let it rest.
 For Stuffing:
* Crush Tindoras in food processor.

* Heat the pan and add oil.
* Add mustard seeds, sesame seeds and green chili-garlic paste.
* Sauté for a while.

* Add crushed tindoras and cook for 8-10 minutes on low-medium flame or cook until the crushed tindoras are well cooked.
* Add cinnamon-clove powder.
* Add sugar,salt and some lemon juice.

* Mix well.
* Turn of the stove and let it cool down.

  For Paratha;
* Divide the paratha dough in to equal parts.
* Roll the dough half way in round shape.
* Fill stuffing in to paratha and cover it.
* Seal the edges completely.

* Roll it again and make paratha.

* Heat the tawa, place paratha on it.
* Cook on moderate heat for 2-3 minutes.
* Turn it and pour half tbls oil or ghee or butter, spread it on paratha and shallow fry over low heat.
* Turn it and again pour half tbls oil or ghee or butter on other side.
* Cook on low heat till gold brown.
* Serve hot with yogurt or garlic chutney or onion or fry green chili.
