It's Valentine's Day weekend!! Yay! and how can the concept of love be complete without food? For those of you, who do not know how to make this Valentine's Day special for him, remember one thing- the way to man's heart is through his stomach. Having said that, let me see I could help you whip up some sweet yummy for your special someone on this special weekend. "Red-Velvet Pancake".... super easy and quick recipe for you all, so you can get rid from kitchen soon and spend some lovely and quality time with love one.

Ingredients:
For Red-Velvet Pancake;
* 1 cup Pancake mix
* 1/2 cup Red-velvet cake mix
* 1 or 2 drops of Red food color
* 2 teaspoon unsweet Cocoa powder
* 1/2 teaspoon white Vinegar
* 3/4 cup Water(use more if needed)
For Cream Cheese Topping;
* 4 ounce Cream Cheese
* 1 tablespoon soften Butter
* 2-3 tablespoon Whipping cream or milk
* 4-5 tablespoon Sugar powder
Few drops of Vanilla extract
Method:
For Cream Cheese Topping;
* In medium bowl, beat cream cheese, butter, sugar, whipping cream and vanilla extract.
* Beat on low speed until topping is smooth.
* Cover it or pour it in some drizzling bottle.
* Set aside.
For Red-Velvet Pancake;
* In large bowl, stir all red-velvet pancake ingredients.
* Mix well. No lumps at all.
* Add some more water if needed.
* Add a large spoonful of the batter to the skillet.
* Cook until bottom edges looks cooked and few tiny bubbles are coming through the top.
* Flip it and cook.
* Take cooked pancake on serving plate.
* Cut into your favorite shape(optional) or just serve it with Cream Cheese Topping and maple syrup.

I'm ready with a unique combination recipe named, 'Pomegranate Flavored Stuffed Khadvi'. This recipe is specially dedicated to my lovely foodie family on this Valentine's Day. Ingredients::
For Pomegranate Khandvi,
* 1/2 cup besan flours (gram flour)
* 1/2 cup yogurt
* 1 cup fresh sweet pomegranate juice (if using ready made pomegranate juice than add some sugar in it, because those juices are really sour)
* 1 1/2 teaspoon red chili powder
* Salt to taste.
For Stuffing,
* 2 tablespoons grated paneer
* 2 tablespoons grated fresh coconut
* 1 to 2 teaspoons sugar
* 1 chopped green chili
* 1 tablespoon cilantro
* 1/2 teaspoon sesame seeds
* Salt to taste
For Tadka,
* 1/2 tablespoon oil
* 1 teaspoon mustard seeds
* Pinch of asafetida
* 1 chopped green chili
some chopped cilantro and grated coconut for garnishing.
Method::
For Stuffing,
* Mix all the ingredients in a bowl and keep on a side.
For pomegranate Khandvi:
* Mix all ingredients in the mixing bowl, using a wire whisk.
* Whisk to form a smooth batter.
* Add some sugar if taste sour.(optional)
* Rest for 20-25 minutes.
* Cook it in a nonstick pan stirring constantly so no lumps form.
* Cook till it becomes smooth and real thick batter.
* Once it's very thick, spread just little on the kitchen counter (just check the batter is ready or not)and spread. If you rolled it than the batter is ready. If not than cook for some more time.
* Once the batter is ready, spread it on the kitchen counter or on the greased inverted Thali.
* Spread into a thin layer using a bowl or a palette knife.
* When cool cut in to strips.
* Spread the mixing of stuffing all over.
* Roll them tightly.
* Keep on side.
* Heat the 1 tablespoon of oil add mustard seeds and chopped green chili and asafetida.
* When they splutter, pour over the Pomegranate flavored Khandvi.
* Serve garnished with chopped cilantro and grated coconut.

An easy peasy recipe for busy moms, who wants to give their kids the best snacks for school's Valentines party. No long list of ingredients or no lengthy procedure. Here's a great idea for quick kids friendly recipe for Valentines Day to show and send more love.
There is no special recipe, it's just nuttella spread, peanut butter, nilla wafers, aslice of banana sandwich in between and rolled in sprinkle. Check notes below for more variations.
Ingredients:
16 Nilla wafers cookies
1 Banana
1 tablespoon Nuttella spread
1 tablespoon Peanut butter
some colorful edible sprinkles
Method:
* Spread the nuttela spread in side of all Nilla wafers.
* Cut the banana in 8 slices.
* Apply peanut butter on sides of banana.
* Roll that side in sprinkles and let banana cover with those.
* Place the banana in between the nuttella spread, nilla cookies.
* Make sandwiches.
* Serve those with love.
Variations Note::
* Use peanut butter on nilla wafers and banana.
* Use any kind of spread like almond butter, peanut butter, nuttela or even honey.
* Use any fruit jam instead of nuttela and peanut butter.
* Use any kind od cookies or cracker.

I'm ready with my first recipe, which is all about "Strawberry-Cheesecake Muffins"!! -A dessert-type Muffins that disappears in minutes:)) A perfect combination of pink and red shades with delicious taste for your love one.The aroma of baking of this muffins are still in my house even thou I baked it yesterday.., no need to blow candle today:).

Ingredients:
8 ounce cream cheese(room temperature)
2 1/2 cups all-purpose flour(Maida)
3/4 cup confectioners' sugar(sugar powder)
1 tablespoon baking powder
1/2 teaspoon salt
1 egg
1 1/4 cup milk
1/3 cup melted butter
1/2 cup fresh chopped strawberries
1/4 teaspoon vanilla extract
Method:
* Mix room temperature cream cheese and 1/4 cup of confectioners' sugar(sugar powder) very well in a mixing bowl.
* Add 1/4 cup fresh chopped strawberries in it and mix softly with help of spoon or fork.
* Set aside.
* Take another big mixing bowl.
* Combine all-purpose flour, baking powder and salt well.
* In a separate bowl, beat together egg, milk, rest of the sugar(1/2 cup), butter and vanilla extract.
* Stir egg mixture into dry ingredients, stirring just until moisted.
* Add remaining fresh chopped strawberries in to better and mix them gently.
* Preheat oven on 375* F and grease the muffin cups or line with paper muffin liners.
* Spoon half of batter into muffin cups.
* Top each portion with 1 tablespoon cream cheese mixture.
* Spoon remaining muffin batter on top.
* Bake in preheated oven for about 15-20 minutes, or until golden.
* Cool in pan for 5-7 minutes, then remove muffins and cool on rack.
* Store in airtight container.
* Serve them to kids at this Valentine's and show them your love to them..
