Veggie Cutlets

    Veggie Cutlets are perfect for snack time. A real hunger relief option for kids and adults too..Every part of the country and in fact, every community has their recipe for a good cutlet. This one is very basic recipe to make a mixed vegetable cutlet. Healthy, nutritious and really easy to make. You can serve these cutlets with any type of chutney or even plain ketchup. Eat it just like that or you can sandwiched between slices of bread or even can make veg. burgers too.

Ingredients::
* 3 Bread slices
* 3 medium size Boiled Potatoes
* 1/ cup chopped vegetables (green beans, corn, carrots and bell-peppers)
* 1/4 Cup chopped onions
* 1 tablespoon Ginger-Garlic-Green Chili paste
* 1/2 teaspoon Turmeric powder
* 1/2 teaspoon red Chili powder
* 1/2 teaspoon Garam masala
* 1/2 tablespoon Lemon juice
* 2 tablespoon chopped Cilantro
* Salt to taste
* 1/3 cup All-purpose(maida) slary (all purpose+water added)
* 1/2 cup dry Bread crumbs
* Oil for frying
Method::
*  Add bread slices into the food processor and make bread crumbs. 
*  Heat the pan with just a little oil and add chopped onions. 
* Saute them and add ginger-garlic-green chili paste.
* Mix all.
* Add mixed vegetable and cook for couple of minutes.
* Add boiled potatoes.
* Add red chili powder, turmeric pwder, garam masala, lemon juice, chopped cilantro and salt.
* Turn off the stove and let it cool down for a while.
* Add fresh bread crumbs init. 

* Now mix the all mixture properly using your hand.
* Take heart shaped cookie cutter, press the mixture into that and make heart shaped cutlets. (You can make it round shaped cutlets too if you don’t have cookie cutter)

* Use same process for reaming cutlets and keep aside.
* Now in a small bowl add all-purpose(maida), add ¼ cup water and make thin paste.
* Dip the prepared cutlet into that paste than coat it with the dry bread crumbs.

* Heat the oil into the pan for frying. (at this step you can shallow fry the cutlets too)
* Place the coated cutlets into the hot oil and fry them both sides till golden brown, remove it on the kitchen paper towel.
* Veggie cutlets are ready. 
* You can serve with chutney or ketchup. 

* Enjoy!!




 Note:
* You can add or subtract veggies as per your choice.
 * You may shallow fry cutlets for less calories.
* You may use corn-flour for coating cutlets instead of maida(all-purpose)

Dhokla Samosa

      Amaze your family and friends with this innovative Dhoklas, which is so so delicious that everybody will be astonished when you tell them,it's 'Dhokla samosa"!!!

     Amalgamation of any original or ethnic recipe can be given a different twist by adding or omitting new ingredients to create a new fusion recipe. This recipe is really proven to be the best of a fusion cuisine Try it and agree with me.Check the Notes for some variation.
Ingredients::
For Dhokla;
1 cup Dhokla-Hadhva flour( rice & tuvar dal  flour mix)
2 tablespoons  Besan flour
2 tablespoons  semolina (ravo)
2 tablespoons  rice flour
1/2 cup + 2 tbls Yogurt
1/4 cup water
2 tablespoons Fruit salt(Eno)
Salt to taste
Some chopped cilantro
Some red chili powder

For Stuffing;
1 tablespoon oil
1/2 teaspoon  cumin seeds
1 teaspoon Urad dal
4-5 Curry leaves(Limdo)
1 tablespoon red chili powder paste(Red chili mix with some water)
1/2 teaspoon Turmeric powder
Pinch of asafoetida
2 medium size boiled and grated potatoes
1/4 teaspoon  Garam masala
Salt to taste
1 teaspoon sugar powder
1/4 teaspoon Chaat masala
Some chopped cilantro

For Chutney;
1 teaspoon  oil
1/4 teaspoon  Cumin seeds
1/2 cup Water
3 tsp Aamchur powder
1/4 teaspoon  garam masala
1 tablespoon Jaggery (gur)
Salt to taste
1/4 teaspoon  Black salt(sanchar)
1/4 teaspoon  Dhanajeeru(cumin-coriander blend)
Some Chaat Masala
Some Mint powder(optional)

For Serve;
Some chopped cilantro
Some grated cheese or paneer(optional)



 

Method:
for Chutney;
* Heat the pan with oil and add cumin seeds.
* After cumin seeds gets cracked add water, red chili powder, aamchur powder, garam masala, salt, jaggery, black salt, chaat masala and mint powder.
* Cook till boiled and gets little thick consistency.
* Turn off the stove and keep it on side.


For Stuffing;
* Heat the pan with oil.
* Add cunim seeds and urad dal.
* Cook for 1-2 mins.
* Add chopped curry leaves and red chili powder paste, turmeric powder and asafoetida.
*  Cook for a minute and add boiled and grated potatoes in it.
* Mix well.
* Add garam masala, salt, sugar, chaat masala and chopped cilantro.
* Mix well for another 1-2 mins and turn off the stove.
* Let it cool down.


For Dhokla;
* Add Dhokla-Hadhva flour, Besan flour, semolina (ravo),rice flour, yogurt and water in a mixer blender cup.
* Mix in a blender till gets smooth batter.
* Pour dhokla batter in to a bowl and let it rest for at least 15-20 minutes.

* Turn on the Dhokla steamer.
* Add fruit salt(Eno) in batter along with 1 tbls water on it and stir briskly & quickly.

* Pour the little amount of batter(should be very thin layer) in the greased pan.
* Place the pan in a steamer and stem for 5-7 mins.

* After 5-7 mins take out the pan from steamer and spread the stuffing all over on dhokla evenly.

* Pour the little amount of dhokla batter on stuffing.
* Sprikle some red chili powder and chopped cilantro on it. 

* Put it again in to steamer and let it steam cook for about 10-12 mins.
* After it done, take out from steamer and place on to serving plate.

* Prick the dhokla with knife.

* Apply chutney all over the Dhokla. 

* Garnish with some chopped cilantro and grated cheese or paneer.

* Cut them in Pieces and Serve.
Variation Note:
* You can use white Dhokla better (Idla) or Idli better instead of my Dhokla recipe method.
* Remaining procedure will be same.

Fruits & Yogurt Parfaits

    Healthy, delicious Fruits & Yogurt parfaits are layered with fresh peaches & oranges, vanilla flavored yogurt, some your favorite granola and fresh kiwis & pears for a lovely morning breakfast or afternoon snack or sweet treat for kids.!! Amazing, Hummmm!!!!

    Welcome back to another #foodiemonday #bloghop. Let's enter with this super healthy and kid's friendly recipe into today's # tricolor challenge. It's Republic Day for India. "May the Indian tricolor always fly high... Warm wishes on, the grand occasion of India's Republic Day." Today's recipe is totally dedicated to all Indians all over the world.

     There are endless possibilities in Parfaits' Recipe. I'm sharing my Daughter's favorite Parfait as a after school snack. She just love these combinations of fruits and yogurt with her favorite Granola bar. You can use any Granola or Cereal in this recipe but, I used Granola Bar(crumbled it) because my kids love the Granola Bar anytime. So just open your imaginations and try out this recipe with your favorite fruits, granola and flavored yogurt. Layer the ingredients into a glass container, starting with fruits and ending with fruits. I think the combination of peaches & oranges with kiwi & pear is especially tasty and pretty because it has sweet and sour flavors in it. When you combine this with soft vanilla flavored Yogurt, it will be heavenly delicious!
Ingredients:
For 2 servings:
1 cup Mix chopped kiwis and pears
1 cup Mix chopped peaches and oranges
1 cup Vanilla flavored yogurt
2 Granola Bars
some honey and color sugar for top of glasses
Method:
* Dip tops of glasses in to honey, then colored sugar. Set them aside.
* Crumble granola bars and keep on side.
* First layer mix of chopped kiwis & pears  in any glass.
* Pour vanilla flavored yogurt on it.
* Layer crumbled granola bar on yogurt.
* Layer mix of chopped peaches and oranges.
* Serve with spoon-they are good to the very last bite:)

Variations Note:
   As I said, this simple recipe has endless variations so here are some::
- Use plain yogurt in place of the vanilla yogurt.
- Use any fruit flavored yogurt in place of vanilla yogurt.
- Use any granola or cereal or oats in place of granola-bar.
- Drizzle some honey on cereals or oats or granolas - Use some honey, if you are using plain granola or cereal.
- Use other combinations of fruits.
-Use some chopped nuts on the fruits.
-Topping with chai-seeds or Flax-seeds on top.      Be thchange you want to see in this world & feel proud to be an Indian...

Instant Spinach-Methi Khaman

             Welcoming '2016' with healthy and authentic breakfast recipe with some 2016's twist.!! There are many many varieties of Khaman, like Vateli dal na Khaman, Instant Khaman, Masala Khaman and so many more. The ultimate Gujarati snack or breakfast. Today's recipe is about Instant Spinach-Methi Khaman.
               I'll share other variations of khaman and dhokla as well in coming up days.  As being Gujarati, I get very disappointed when i see or hear or read other people or any other source that says, 'Khaman-Dhokla' recipes or whatever:) Actually Khaman(made from besan) and Dhokla(made from rice&dal) are two different things. But never mind, as far as people enjoy the taste of them, let them call whatever they wants to:-))

               Today in our #foodiemonday #bloghop, we are going to share #regionalbreakfast recipes. I'm from Gujarat and I am representing Gujarati's the most favorite recipe, Khaman- A nutritious and irresistible Gujarati snack. Once a Gujarati staple, steamed and low cal dhokla are universally popular these days!! They make a particularly wholesome and light breakfast. And I added Spinach-Methi to add color and make them more nourishing.

Ingredients:
1 cup shredded Spinach
1/2 cup chopped Methi(Fenugreek leaves)
1 1/2 cup Besan(Chickpea flour)
1/2 cup water
2 tbls Sugar
2 tbls Ginger-Green chilli paste
2 tbls Fruit salt(Eno)
Salt to taste
For Tadka(Tempering);
2 tbls Oil
1 tsp Mustard seeds(Rai)
Pinch of Asafetida
2 tbls chopped Green chilies
For Garnishing;
2 tbls chopped Cilantro
1/2 cup grated Coconut
Method:
* Add spinach, methi, ginger-chilli paste and water in a blender cup. And Blend well till becomes a smooth paste.
* Pour this paste in a big mixing bowl.
* Add besan, sugar and salt in it and mix again.
* Add some more water if need to be make Khaman batter.
* Mix well.
* Pour the Khaman  batter into the dish mould, till half full.
* Put the dish mould into the steamer, cover the lid of steamer and steam for 15 minutes.
* Remove the mold dishes from the steamer after 15 min. and allow it to cool down for about 10 min.
* Cut Khaman into square shapes.
* Take tempering pan, heat oil in it. and add mustard seeds,chopped green chilies and pinch of asafetida.
* Once they splutter pour the tempering over the Khaman.
* Garnish with chopped cilantro(dhana) and grated coconut.
* Serve with any green chutney.

Note: If you want to use ready made Khaman Mix(Gits) then just add shredded Spinach and chopped Methi and Ginger-Green Chili paste in that ready made flour. It will taste great too.

Cereals-Oats Bhel

     
                Tease your taste buds with this chatpata, tangy, tuneful and an absolute flavorful  fusion dish. "Cereals-Oats Bhel"!!!


          "Bhel" is one of those words that instantly evokes childhood and adolescence for many of us. Growing up, we didn't have a huge amount of entertainment that kids today have. An outing basically involved us heading to beach with whole family and a sizable chunk of neighborhood in tow. After too much fun, as a special treat, we would be treated to "Bhel" from nearby vendor's cart. We would look on, awestruck, as the vendor quickly chucked puffed rice, papdi, sev into a big open pan. He would then toss in a handful of diced onions, some spicy chickpeas and some cilantro into the mix. Then splatter on some chutneys, whisk it all together and ladle it into newspaper cones, then pass it on to our eager hands... Hummmm, yummy!!!!
    
     And oh!!! The explosion of flavors and textures that greeted our first bite. But time is being changed. But still I am pretty sure almost everyone would love to eat "Bhel".  And for that reason today I am going to share an awesome variation of "Bhel". It's "Cereal-Oats Bhel"... This Bhel made with medley of breakfast cereals. So this is healthy version of Bhel too. Of course it is again a fusion recipe and weekend-special because it's rapid recipe with lots of sweet, salty, spicy, tangy, crispy, chewy, soft.....tastes. Nothing became close to savouring "Bhel" as kids or as teenager or as grown up or as oldies:)
Ingredients:
2 tbls Cilantro green chutney
2 tbls dates-Tamarind sweet chutney
1 tbls Garlic and red chili chutney(optional)
3/4 cup Mix of chopped onions, pomegranates, chopped tomatoes, chopped cilantro and boiled and chopped potatoes.
Chaat masala to sprinkle on Bhel
Method:
* Take a big mixing bowl.
* Add mix of chopped onions, tomatoes, cilantro, potatoes and pomegranates.
* Add all three chutneys according to your taste.
 
* Toss all together very well.
* Sprinkle some chaat masala on it.

* Serve it immediately and enjoy the fabulous version of Bhel.
Note:
* You may use just combinations of any cereals with out making chivda.(direct from box)
* Always add or subtract any topping of your choice.
* Adjust all chutneys according to your taste.
* Last but not least add your 'love' to make the dish more 'yummy'.

Stuffed Schezwan Vada Pav (Schezwan Dinner-Roll)

        Here I am back with another fusion recipe. It's all about Vada Pav with the fusion twist. I am going to bake today Stuffed Schezwan  Vada Pav, in one recipe!!! How does it sound to you all? I know, it sounds like heavenly Luscious.. I usally makes Schezwan Vada Pav by simple way but today, I tried  to baked Stuffed Schezwan  Vada Pav in some clashing way and it really came out super yummy. I stuffed Schezwan Vada in Pav dough while baking.
       There are so many variation in this one recipe. Like you can make Schezwan Vada and serve just like the regular Vada Pav. The other variation is about stuffing. You can stuff so many other fillings in the Bun and bak them like, fill Panner Bhurji, Grilled vegetables, chesses and so many more. Ingredients:
For Schezwan Vada:
2-3 Boiled and Messed Potatoes
2-3 tsp Schezwan Sauce or Chutney(I used Ching's schezwan chutney)
1-2 tsp Soy Sauce
Some Black pepper powder
salt to taste
1/2 tsp Crushed Red Chilies
2 tbls chopped Green Onions
For Pav: (Buns)
3 cups Bread flour
1 packet Active Dry yeast(2 1/4 tsp)
1 tbls Sugar
1 tsp Salt
3 tbls melted Butter
1/4 cup lukewarm Water
3/4 cup lukewarm Milk
1 tsp Baking Soda
Pinch of Baking Powder
For Garnish:
Some milk
Some Butter to apply on Pav
Some Oil
Dry coconut and Red chili powder(I crushed some dry coconut and dry red chili with some garlic powder and salt)
1 tsp black and white sesame seeds
2 tbls Schezwan Chutney or Sauce.
Method:
For Schezwan Vada;
* Mix all ingredients in bolied and messed potatoes and mix well.
* Divide into 12 equal parts and give them ball shape.
* Keep aside for later use.
For Pav;(Buns)
* Take big mixing bowl.
* Add bread flour in to bowl.
* Add yest, salt, sugar and baking soda and baking powder.
* Mix all together very well.

* Add melted butter and mix till gets crumble texture.
* Add lukewarm water and lukewarm milk in it very slowly.
* Knead  the dough till gets stiff.
* Apply the oil all over in the bowl.
* Coat the dough with oil as well.
* Cover the bowl with plastic/cling wrap.
* Allow to rest dough or at least 25-30 minutes.
* Pop in to the oven.(do not turn on oven:)
 (The best way to rise the dough is, keep it in the oven and keep oven lights on)
* After 30 minutes, take out the dough from bowl.
* Punch dough down and make 12 equal size parts.
* Roll or just stretch with your hand on kitchen counter.
* Apply just some Schezwan chutney or sauce on it and stuff with one portion of Schezwan Vada in it.

* Gather the edges and press to seal.
* Roll it between your palm to make a round shape.
* Grease a baking tray with oil.
* Place the stuffed pav(buns) in there.
* Stuff all the pav (buns) like that and place them in the greased baking try.
* Brush the milk on each pav(bun).
* Sprinkle some coconut and red chili powder and sesame seeds on each pav(bun).
* Cover the baking tray with plastic wrap again and let dough rise in a warm place until double in size almost about an hour or so.
* Preheat oven on 375*F.
* Remove the plastic wrap after an hour.
* Bake the pav for 20-25 minutes on 375*F or until gold light brown in color.
* Take out from oven and apply some butter on them.
* Separate each pav with help of bread knife.
* Your super delicious Stuffed Schezwan Vada Pav are ready.
 
* Looks gorgeous, right?!!!
* The pav or bun or rolls breaks apart easily.

* Enjoy with any kind of dip.(Green chutney or garlic chutney or ketchup or schezwan chutney)
    One of the important ingredients in exceptional baking food is Fun!
