Red-Velvet Cookies

       A moist and soft cookie that is perfect for the holidays! They really are DELICIOUS! An easy Red Velvet 3 Ingredient Cake Mix Cookie recipe, done in less than 25 minutes!

Ingredients:
1 Box Red-Velvet cake mix
1/3 cup Oil
2 Eggs
Powder sugar to roll cookies (optional)
Some white chocolate chips (optional)
Method:
* Pre-heat oven on 350* degrees.
* Mix red-velvet cake mix, oil and eggs in a mixing bowl.
 
* Make thick batter.
* Spoon into balls and roll in the powder sugar.
 
* Place on the cookie sheet leaving about 2" between cookies.
* Place the baking try in to oven.
* Bake them for 8-10 minutes until cookies gets brown slightly from edges.
* Sprinkle some powder sugar again if you want too or insert some white chocolate chips..

* Let them cool down on cooling rack..

Pecan Cranberry Oatmeal Cookies

   The traditional oatmeal cookies gets a festive makeover with the addition of Pecan and Cranberries!! If you like thick, chewy, delicious oatmeal cookies, then this recipe is for you!;)  And a perfect treat for holidays!!

Ingredients:
3/4 cup All-purpose flour
1/2 tsp Baking soda
1/2 tsp Cinnamon powder
1/4 tsp Sea salt
1/2 cup Butter (room temperature)
1/2 cup Light brown sugar (packed)
2 Tbsp Granulated sugar
1 large Egg (room temperature)
1 tsp Vanilla
1 cups Rolled oats
1/2 cup Dried cranberries
1/2 cup Chopped pecans
Method:
* In a medium bowl, whisk flour, cinnamon powder, baking soda, and salt. Set aside.
* In the another mixing bowl of an electric mixer, beat butter and sugars on med-high until pale and fluffy (approx. 3 minutes).
* Add egg and beat on high for 1 minute.
 
* Add vanilla.
* Turn mixer to low and add flour mixture, mix until combined.
* Add oats, cranberries, and pecans.
 
* Mix until just combined.
 
* Chill dough in the fridge for at least an hour.
* Preheat oven to 350F and line a baking sheet with parchment or a Silpat sheet.
* Using a small cookie scoop, place cookies on baking sheet 2" apart. I did 11 cookies per sheet. Press cookies down slightly if desired (I didn't).
* Bake for 10mins or until edges are lightly browned but center is still soft and unset.
* Cool for 5 minutes on baking sheet, then transfer to cooling rack to cool completely.
* Enjoy them anytime.

Notes:
--If you prefer your cookies to be less puffy, just press down on the tops a bit before putting them into the oven.  
-- You can add your choice of dry-fruits in this recipe too, just like almonds, raisins, chocolate chips or any other..

Snickerdoodle Cookies (Eggless)

          Making soft, thick & puffy Snickerdoodle Cookies at home is easy. And certainly quick! Snickerdoodles cookies(eggless)-- crisp edges with soft and fresh texture with full of cinnamon flavor, extremely delicious..

         It's world #cookieday today! Cookies comes in all different shapes, flavors & size. To celebrate World Cookie Day, let's bake a heavenly luscious Snickerdoodle Cookies
        A snickerdoodle is type of soft sugar cookie dusted with cinnamon powder and sugar powder. Like sugar cookie dressed in cinnamon sugar outfit..:) That's why me and my kids love them so much, besides their amusing name of course. We just adore anything with cinnamon & sugary. when you bite into it, you will find edges are wonderfully crisp and inside texture is soft with lovely buttery sweet flavor. These cookies are often served on Christmas and actually I am going to share this recipe with you so you all can bake this on Christmas and will make your Christmas extremely special..
Ingredients:
for cookie;
1 1/2 cup All purpose flour
1/2 tsp Baking powder
3/4 tsp Baking soda
1/4 tsp Salt
3/4 cup Sugar powder
1/2 cup Unsalted melted butter
3 tbls Milk
1 tsp Vanilla extract
for coating;
2 tbls Sugar powder
1 tsp Cinnamon Powder
some small decorating candies(optional)
Method:
* Mix sugar powder and cinnamon powder and keep it aside for coating the cookies at last.

* Mix all purpose flour, sugar powder, baking powder, baking soda & salt in a bowl.
* Combine them very well.

* Mix melted butter, milk & vanilla extract in another bowl and mix well.

* Add melted butter and milk mixture to dray ingredients.

* Fold them in till you gets smooth dough.

* Chill the dough in the fridge for 30-40 minutes.
* Preheat oven to 330* F. 
* Line baking tray with parchment paper.
* Now Take out dough from fridge.
* Make smooth equal balls from dough.

* Roll all balls into prepared cinnamon-sugar mixture and coat well.
* Arrange the cookies on the baking tray, flatten them slightly.
* Bake in preheated oven for 12-15 minutes or till the edges are medium brown in color.
* Remove from oven and sprinkle some decorating small candies.
* Wait for 5 minutes.
* Remove from baking tray and let them cool down completely on cooling rack.
*Enjoy !!!!
