Creamy Berry Frozen Yogurt-(Navratri Special)

Happy Navratri to all of you!!
     May this Navratri give you..Peace, Power, Prosperity, Wealth, Patience, Inner-beauty, Simplicity, Success, Sacraments, Health, Honors and love.

    A very jiffy and simple recipe on this Navratri celebration..-Frozen Berry Yogurt in just few minutes so prepare it and enjoy it while playing Dandiya these days!!! It's so easy to make, I can hardly call it a recipe.

Ingredients:
 1 Cup Frozen mixed Berries
 1/2 Cup Yogurt
 2-3 tbls heavy whipping cream
 Few drops of Vanilla extract
 1 tbls Honey
 1 tbls Brown Sugar
Method:
* In food processor or blender, add frozen berries, yogurt, whipping cream, honey, brown sugar and vanilla extract.
* Blend for a minute or until the mixture is creamy.
* Serve soft or Transfer to an air tight freezable container and freeze it for at least 3 hours or overnight.
* Store it in the freezer for up to 2 weeks..

Indian-Style Tapenade

   "Tapenade"..Don't you think, this sound so interesting.? Yes, it does.. Tapenade is a popular food in the south of France. Generally eaten as spread on bread. Tapenade's base ingredient is Olive.. Olives and capers are finely chopped, crushed or blended. Olive oil is then added until the mixture becomes a paste. Of course, you all know me well now, without any fusion touch this girl doesn't have any fun:) Cuisines like fusion, are not categorized according to any one particular cuisine style and have played a part in a number of innovations. So no limitations or no rules or regulations, just follow your taste and enjoy this unique and healthy recipe of "Indian-Style Tapenade!!
      Basically I changed almost all ingredients from traditional recipe of Tapenade. But I insist you all to try at least once, and you will fall in love with this healthy and jiffy recipe.. So let's begin shall we...

Ingredients:
1 loaf French Bread
1 cups boiled moong(green gram)
Salt to taste
1/2 cup mix of green & black chopped olives
2 tablespoons finely chopped onions
1 tablespoon finely chopped garlic
1 teaspoon finely chopped green chili
3-4 tablespoons extra virgin olive oil
1/2 teaspoon lemon zest
2 tablespoon chopped cilantro or chopped parsley or both 1tbl each
1/4 teaspoon crushed dry red chilies
1/2 teaspoon lemon juice
Some more extra virgin olive oil and crushed red chilies for garnishing. Adjust all spices according to your taste.
Method:
* Heat the pan with 1 1/2 tablespoon of extra virgin olive oil.
* Add chopped onions, chopped garlic, chopped black & green olives.
* Mix well for a minute.

* Add boiled moong along with salt and mash them lightly.
* Add lemon zest and mix.

* Turn off the stove and transfer the mixture into a bowl.
* Add chopped cilantro or chopped parsley into the mixture.
* Add crushed dry red chilies, lemon juice and remaining 1 1/2 tbls extra virgin olive oil.
* Mix well.

* Cut diagonal slices of French bread.
* Toast them very lightly. * Arrange bread slices on a serving platter.
* Spread the moong tapenade mixture over each slice.

* Drizzle extra virgin olive oil and sprinkle some crushed red chilies over them.

* Serve and Enjoy the unique Indian-Style Tapenade...

 So, You've got an amazing and fancy but easy appetizer!! Doesn't that look SO delicious?

Chinese Bhel

    We all desire harmony in our lives and this works on the ancient Taoist principle of Yin and Yang in which balance and contrast are the key. Each Chinese dish reflects a balance of taste, texture, aroma and color. Be it sweet, sour, pungent, hot, salty or spicy-all the basic flavors are incorporated deftly in all Chinese dishes. Here the recipe with full of lip smacking taste with some Indian twist.."Chinese Bhel"-Crispy noodles with vegetables, toasted with sauce. Enjoy the crunchy-munchy Chinese Bhel...

Ingredients::
2-3 cups boiled Noodles
1/3 cup chopped Spring onions
1/4 cup chopped Cabbage
1/4 cup chopped bell-peppers
1/4 cup chopped onions
2 tablespoon chopped Carrots
1 tablespoon Ketchup
1 tablespoon Schezwan sauce
1 tablespoon Soya sauce
1 teaspoon red chili-garlic paste( I used ready made)
1/4 teaspoon Sugar
Salt to taste
Oil for Frying
Method::
* Take a mixing bowl and add all chopped vegetables in it.
* Add ketchup, schezwan sauce, soya sauce, red chili-garlic paste,salt and chopped spring onions.(keep 1-2 tbls chopped spring onions for garnishing)
* Add sugar to balance the taste and mix.
* Mix all vegetable and sauce very well.
* Keep it on side.
* Heat the oil in frying pan.
* Add boiled noodles and fry them till gets golden and crispy.
For Serving;
* Combine vegetable sauce mix with fried noodles in a big bowl and mix well gently.
* Transfer as in a serving plate or bowl.
* Garnish chopped spring onions.
* Serve it immediately.

Note:: Adjust sauce according to your taste.

Puri-Bhaji Spring Rolls


    Weekend-special recipe is here.. This recipe is very common in India households but I'm going to present it  in new avatar, so get ready for it.. It's authentic and modern, easy and quick, simple and delicious. Let's make awesome recipe this weekend real fast and enjoy the weekend.

Ingredients:
1 bowl Whole wheat flour Puri dough
3-4 medium potatoes, boiled, peeled and chopped
1 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1-2 green chillies, finely chopped
¼ teaspoon turmeric powder

1/2 teaspoon lemon juice
Salt to taste
1 tablespoon chopped fresh coriander leaves
Oil for deep-frying + for greasing
Method::
* Heat oil in a non-stick pan. Add mustard seeds, cumin seeds and let mustard seeds splutter. Add green chillies and turmeric powder and sauté for 30 seconds.
* Add potatoes, mix and cook for 1 minute. Add salt and lemon juice and mix. Add chopped coriander and mix well. Remove from heat and cool.



* Heat sufficient oil in a kadai.
* Divide the dough into equal portions and shape them into balls.
* Place each ball and roll out to make a puri.
* Divide the potato mixture into equal portions and put a portion of potato mixture in the centre of each puri and fold like spring rolls.



* Deep-fry each spring roll in hot oil till golden and crisp. Drain on absorbent paper.
* Serve hot.

Cabbage-Corn & Bell pepper Sabji

       A unique, hypersonic & warmly spiced wraps Sabji , for this lazy cold winter's weekends!! Another great and rapid recipe to enjoy your weekends.. "Cabbage-Corn & Bell pepper Sabji"!!! Of course, the name is little long but believe me the recipe is super short with full of awesome taste. 
This recipe is simple and easy like chop-chop and done. I add some Chinese flavor in this Sabji and that twist bring the taste on top. No more chit-chat because, of course  it's relaxing weekend. So shall we start the recipe..!?!   

 
Ingredients:
2 tbls Oil
1 tsp Mustard Seeds
2 tbls Tomato Puree
2 cups Shredded Cabbage
1/3 cup Corn
1/2 cup Sliced Bell peppers
1/4 cup sliced Tomatoes
1/4 tsp Turmeric Powder
1/3 tsp Red chili powder
1/3 tsp Dhanajeeru (mix of Coriander and Cumin Powder)
1 tbls Schezwan Masala? Seasoning or 1/2 tbls Schezwan Paste (I used Ching's Brand)(I used both the paste and seasoning masala both half -half)
Salt to taste
Some cilantro for Garnish.
Method:
* Heat the oil in a pan.
* Add mustard seeds and cook till the starts cracked.
* Add tomato puree and just cook for half minute.
* Add corn and cabbage.

* Mix all well.
* Add bell peppers and sprinkle 1-2 tbls water.
* Let it cook for 2-3 minutes and stir in between.
* Add sliced tomatoes and let it cook again for couple of minutes.
* Stir it well.
* Add salt, turmeric powder, red chili powder, dhanajeeru and schezwan powder.
* Mix well and let it cook again for couple of minutes more.
* Turn off the stove once, cabbage is cooked well.
* Shift sabji into serving plate and garnish with some chopped cilantro.
* Enjoy the unique taste sabji with Roti or Parathas or Puri.

 

NOTE:::If you don't have the Schezwan Masala in your pantry, you can use any schezwan masala like, schezwan noodle masala or schezwan fried rice masala.

Cracked Wheat & Oats vegetable Khichdi

      I can't believe it's December already. This year has completely flown by- and soon it will be 2016! Before we head into the new year, I wanted to make sure one thing that you all eat healthy and stay healthy for ever. For many people, eating healthy is a chore. When the world is filled with all junkie food, why in the world we ever bother eating a healthy meal? But also eating healthy food is actually delicious-- no lies. If you don't know where to begin when it comes to making healthy food choice-- or if you are already following a healthy, wholesome diet but need some new recipe idea--I have one super healthy recipe to share with you all today. It is Cracked Wheat & Oats vegetable Khichdi. Sounds already healthy, right?!

      When this week's #foodiemonday #bloghop challenge of #onepotmeatmoday comes up, I was pretty sure about sharing this easy and healthy recipe. Let's set go.. Going to be part of #foodiemonday #bloghop with healthy one pot meal.

Eat better NOT less....

Ingredients:
1/2 cup cracked wheats(fada)
1/4 cup split moog dal 
2 tbls split moog dal with skin
2 tbls Oats
2 tbls Ghee
1tsp cumin seeds
1/2 cup chopped onions 
1 cup of mixed vegetables of your choice (I used chopped potatoes, green peas, some soybeans, some green onions, some corn, chopped methi leaves, chopped cauliflower)
1/2 tsp cinnamon-cloves powder 
1 tsp turmeric powder
1 tbls ginger-garlic paste
1 tsp green chili paste
1 tsp garam masala or bisi belle rice masala
Some cashews and raisins 
2tbls Chopped Cilantro 
Salt to taste
Adjust chilies and garam masala according to your taste.
Method:
* Wash and soak cracked wheats (fada) and both dals for about 15-20 minutes.
* Heat the ghee in a pressure cooker or a big heavy bottom pot.
* Add cumin seeds and saute well.

* Add chopped onions and cook till gets tender.
* Add ginger garlic paste and green chili paste init.

* Cook for 1-2 minutes and add all mix vegetable of you choice.

* Season with turmeric powder, cinnamon-cloves powder and garam masala.

* Add soak cracked wheats and both dals.
* Mix all well.
* Add oats, raisins and cashews. Mix again.

* Season with salt and add required water.


* Mix well.

* Cover the pressure cook for 2-3 whistles.

* Garnish with chopped cilantro and serve hot with yogurt or kadhi or chaas.

Cereals-Oats Bhel

     
                Tease your taste buds with this chatpata, tangy, tuneful and an absolute flavorful  fusion dish. "Cereals-Oats Bhel"!!!


          "Bhel" is one of those words that instantly evokes childhood and adolescence for many of us. Growing up, we didn't have a huge amount of entertainment that kids today have. An outing basically involved us heading to beach with whole family and a sizable chunk of neighborhood in tow. After too much fun, as a special treat, we would be treated to "Bhel" from nearby vendor's cart. We would look on, awestruck, as the vendor quickly chucked puffed rice, papdi, sev into a big open pan. He would then toss in a handful of diced onions, some spicy chickpeas and some cilantro into the mix. Then splatter on some chutneys, whisk it all together and ladle it into newspaper cones, then pass it on to our eager hands... Hummmm, yummy!!!!
    
     And oh!!! The explosion of flavors and textures that greeted our first bite. But time is being changed. But still I am pretty sure almost everyone would love to eat "Bhel".  And for that reason today I am going to share an awesome variation of "Bhel". It's "Cereal-Oats Bhel"... This Bhel made with medley of breakfast cereals. So this is healthy version of Bhel too. Of course it is again a fusion recipe and weekend-special because it's rapid recipe with lots of sweet, salty, spicy, tangy, crispy, chewy, soft.....tastes. Nothing became close to savouring "Bhel" as kids or as teenager or as grown up or as oldies:)
Ingredients:
2 tbls Cilantro green chutney
2 tbls dates-Tamarind sweet chutney
1 tbls Garlic and red chili chutney(optional)
3/4 cup Mix of chopped onions, pomegranates, chopped tomatoes, chopped cilantro and boiled and chopped potatoes.
Chaat masala to sprinkle on Bhel
Method:
* Take a big mixing bowl.
* Add mix of chopped onions, tomatoes, cilantro, potatoes and pomegranates.
* Add all three chutneys according to your taste.
 
* Toss all together very well.
* Sprinkle some chaat masala on it.

* Serve it immediately and enjoy the fabulous version of Bhel.
Note:
* You may use just combinations of any cereals with out making chivda.(direct from box)
* Always add or subtract any topping of your choice.
* Adjust all chutneys according to your taste.
* Last but not least add your 'love' to make the dish more 'yummy'.
