Peas & Spinach Soup

  Peas & Spinach soup-- a soup with full of flavor and easy & simple to make. It is full of antioxidants and rich source of protein with lots of vitamin C. Let's try it and enjoy it..

Ingredients:
2 cups fresh or frozen Peas
1/2 cup Spinach puree (blanch and crushed)
1/3 cup chopped onion
1 tablespoon roughly chopped Garlic
1 tablespoon Olive oil
Salt to taste
Black pepper powder to taste
1 teaspoon crushed Red pepper
1 cup Water or vegetable stock
1-2 teaspoon cream for garnishing (optional)
Method:
* Take a sauce pan and add olive oil.
* Add chopped onion and garlic.
* Sauté them until gets brownish pink color.
* Add green peas, salt, ground black pepper and mix it or stir it for a minute.
* Add water/vegetable stock and boil for another 6-8 minutes till peas become soft.
* Switch of the flame and let it be cool down.
* Now blend it with Spinach puree till smooth and creamy texture.
* Switch on the flame again and pour the mixture in pan.
* Cook it till boil.
* Turn off the stove and serve soup.
* Garnish with some crushed red-pepper and cream.
* Enjoy the Peas & Spinach Soup with bread, croutons, crackers or as per your choice..

Tomato & Mixed Veggie Soup

      There's nothing like a good soup when you're tired of eating fast food and at random restaurants. While cooking at home is always easy on the wallet, soups are often packed with myriad of beans, which means you're getting evevn more bang for your buck (and full tummy too:) This soup recipe show you how to whip up a fabulous pot of soup anytime in year in just a few minutes. This Tomato & Mixed Veggie Soup is a great for weight watchers too..

Ingredients:
3 Tomatoes
1-2 cups roughly diced mixed vegetables (carrots, beetroot, green onion, spinach leaves, bottle gourd(dhudhi), green cabbage, purple cabbage)
3 cloves garlic
4-5 Chopped Basil leaves
1/2 tablespoon Butter
1 teaspoon Cumin powder
Salt to taste
Crushed black pepper to taste.
1/2 tablespoon Sugar
1 to 1 1/2 cup Water
some cream for garnishing.
Method:
* Pressure cook all the vegetables along with tomatoes and garlic.

* Blend all the vegetables after pressure cooked.
* Strain them finely.

* Heat the pan add butter and cumin powder.
* Add strain vegetables and water.
* Add chopped basil leaves. 
* Add sugar, salt and crushed black pepper.
* Cook it till the soup boil and turn off the stove.

* If you like thick consistency boil it more.
* Garnish with cream.
* Serve it hot.

* Enjoy!!!

Khandeshi Dal

     "Khandeshi Dal"--- definitely a new name for almost everyone, specially  who is not familiar from typical Maharastrian cuisine. Yes, Khandeshi Cuisine is one of the Maharasrian Regional Cuisine. Khandesh is in Maharashtra. Khandeshi cuisine is quite spicy, simple and flavorful. I'm going to share, one of the simple but delicious recipe of Dal today from a unique Khandeshi Cuisine. A good replacement to regular Dal.. The aroma of the Pakka-Masala being roasted is truly amazing and that's the essence of this recipe..  Try it once and I am sure you would love to add this Dal more often in your daily meal..

Ingredients::
1 cup Mix dal(masoor dal, tuvar dal, urad dal, chana dal)
2 tablespoon whole green Moong
1/4 teaspoon Turmeric powder
2 tablespoon Oil
1 teaspoon Mustard seeds
1-2 Dry red chillies
1 Bayleaf
3 teaspoon Lemon juice
3 tablespoon chopped Cilantro(dhania)
Salt to taste
For Pakka Masala;
1 teaspoon Oil
1/4 cup Dry grated Coconut
1/2 cup Sliced Onions
1 1/2 tablespoon Dhana-jeeru (coriander-cumin powder)
3-4 Dry Kashmiri Red chillies
3-4 Cloves
2 cardamoms
1 small stick of Cinnamon
2-3 Black peppercorns
3-4 cloves of Garlic

Method::
For Pakka Masala;
* Heat the oil in a pan.
* Add grated coconut and sliced onions, sauté for 3-4 minutes.
* Add dry red chillies, dhana-jeeru, cloves, cardamom, cinnamon and black peppercorn.
* Sauté for another 2-3 minutes on low-medium flame.
* Add garlic and sauté on medium flam for few seconds.
 
Turn off the stove.
* Let it cool down completely.
* Once cooled, blend in a mixer or in a blender to a smooth powder/paste and keep aside.

For Dal;
* Clean, wash and soak the mix dals and moong in a water for atleast 30-40 minutes.

* Pressure cook dal and moong with 2 cups of water, salt and turmeric powder.
* Boil Dal & Moong well.
* Add 1/2 of the prepared Pakka masala powder/paste in to dal, mix well and keep aside.

For Tempering;
* Heat the 2tbls oil in a pan.
* Add mustard seeds, when the seeds crackle, add the dry red chillies and bayleaf.
* Sauté on medium flame.
* Add the prepared Dal mixture, mix well and cook.
* Cook for 3-4  minutes, and stir continues.
* Add some more Pakka masala if you want more flavors and spice.
* Add lemon juice and chopped cilantro.
* Adjust the salt.

* Cook on low flame for couple of minutes more and turn off the stove.
* Garnish with some chopped cilantro and serve it immediately..

* Enjoy!!

Detox Blueberry Salad

        This Detox Blueberry Salad recipe, helps you lose weight, increase your energy, and the most importantly, reset your frame of mind, end craving and flush out the toxins in your system so it is easier to eat healthy and live better... So when I saw gorgeous & fresh Blueberries at the farmer's market in my town, I couldn't help but imagine them  pairing perfectly with some yogurt,nuts and greens. And So, this Detox Blueberry Salad was born..:)Look at the color! Swoon....
   A healthy and interesting salad recipe for #foodiemonday #bloghop #nocooknobake challenge.

     I think you guys are going to love this salad. It's Summery, Healthy, Crisp, Fruity, Savory-sweet, Satisfying, Quick, Plant-based & Seriously delicious...
 Ingredients:
For salad::
3/4 cup fresh blueberries
3/4 cup finely diced Kale, Spinach & Chard mix
 1/2 cup finely diced red cabbage
1/4 cup finely diced cucumber
1/4 cup finely diced avocado
1/4 cup finely diced lettus
1/4 cup finely diced red onion
1 tablespoon any color diced bell-pepper
2 tablespoon finely diced beetroot
For dressing::
3-4 tablespoon yogurt(prefer low fat)
1 1/2 tablespoon extra virgin olive oil
1 tablespoon lemon juice
1/2 to 1 teaspoon sea salt or salt to taste
Some freshly ground black pepper
For garnish::
1 tablespoon toasted diced almonds
1/2 tablespoon flax seeds
Method:
For dressing;
* Place all dressing ingredients in a bowl and mix very well.
* You may place all ingredients in a blender and pulse to obtain a smooth liquid.
For Salad;
* Place all the salad ingredients in a large bowl and toss to combine.
* Pour the dressing over the salad and mix to combine.
* Top with toasted almonds and flax seeds.
* Serve it and enjoy it.
    Detox Blueberry Salad--The ultimate cleansing salad, filled with detoxifying red cabbage, blueberries, red onionspinac-kale-card mix and avocado, as well as a tart dressing made from EVOO and lemon juice. If I could eat only ONE salad for the rest of my life, this would be it..:) End craving, lose weight and reset your body chemistry, so it is easier to eat and drink healthier and live better.

Lemon-Cherry Berry Spa Water

      My Lemon- Berry spa Water is my bestie these days..:) Lemon-Berry Spa Water counts as my daily water intake and helps make the water more interesting..i.e. more easy to drink in hot summer days!!!
      This water is also great for flush fat:), good for Detox our body.. It's just easy-peasy to make too. Just combine all ingredients with water and chill it overnight in the refrigerator, drink throughout the day...


Ingredients:
1 cup berry mix (blueberry, dark cherry, red cherry, strawberry) frozen or fresh
1 lemon sliced
2-3 leaves of fresh mint
3 cups water
Some ice if needed
Directions:
* Add all ingredients to large glass or in to a pitcher.
* Cover lid and all to chill overnight in the refrigerator.
* drink throughout the day.
* Add some ice cubes if want more cold.
* Cheers!!

       Drink more H2O with Detox Spa water. It helps you to Maintain a flat belly.

Fruits & Yogurt Parfaits

    Healthy, delicious Fruits & Yogurt parfaits are layered with fresh peaches & oranges, vanilla flavored yogurt, some your favorite granola and fresh kiwis & pears for a lovely morning breakfast or afternoon snack or sweet treat for kids.!! Amazing, Hummmm!!!!

    Welcome back to another #foodiemonday #bloghop. Let's enter with this super healthy and kid's friendly recipe into today's # tricolor challenge. It's Republic Day for India. "May the Indian tricolor always fly high... Warm wishes on, the grand occasion of India's Republic Day." Today's recipe is totally dedicated to all Indians all over the world.

     There are endless possibilities in Parfaits' Recipe. I'm sharing my Daughter's favorite Parfait as a after school snack. She just love these combinations of fruits and yogurt with her favorite Granola bar. You can use any Granola or Cereal in this recipe but, I used Granola Bar(crumbled it) because my kids love the Granola Bar anytime. So just open your imaginations and try out this recipe with your favorite fruits, granola and flavored yogurt. Layer the ingredients into a glass container, starting with fruits and ending with fruits. I think the combination of peaches & oranges with kiwi & pear is especially tasty and pretty because it has sweet and sour flavors in it. When you combine this with soft vanilla flavored Yogurt, it will be heavenly delicious!
Ingredients:
For 2 servings:
1 cup Mix chopped kiwis and pears
1 cup Mix chopped peaches and oranges
1 cup Vanilla flavored yogurt
2 Granola Bars
some honey and color sugar for top of glasses
Method:
* Dip tops of glasses in to honey, then colored sugar. Set them aside.
* Crumble granola bars and keep on side.
* First layer mix of chopped kiwis & pears  in any glass.
* Pour vanilla flavored yogurt on it.
* Layer crumbled granola bar on yogurt.
* Layer mix of chopped peaches and oranges.
* Serve with spoon-they are good to the very last bite:)

Variations Note:
   As I said, this simple recipe has endless variations so here are some::
- Use plain yogurt in place of the vanilla yogurt.
- Use any fruit flavored yogurt in place of vanilla yogurt.
- Use any granola or cereal or oats in place of granola-bar.
- Drizzle some honey on cereals or oats or granolas - Use some honey, if you are using plain granola or cereal.
- Use other combinations of fruits.
-Use some chopped nuts on the fruits.
-Topping with chai-seeds or Flax-seeds on top.      Be thchange you want to see in this world & feel proud to be an Indian...

Stuffed Chikki

   "With great devotion, fervor & gaiety, 
           With rays of joy & hope, wish you & your family,
                               Happy Makar Sankranti!"
                        Makar Sankranti celebrated in several states in India. It's harvest festival and essentially also mean to welcome the spring! Like every festive celebration, it is a time when mouth-watering traditional delicacies are lined up. Til (Sesame seeds)  Ki chikki, is one of them too. Making Til ki chikki or ladoo is tradition followed in most Indian households to bring in this festive. All you have to do is melt Jaggery and pourin lots of toasted sesame seeds, transfer this mix on kitchen surface, flatten to make a chikki or ladoo.
      Of course, I'm going to share simple and easy recipe of this Chikki with just jiffy stuffing recipe. Just follow the recipe step by step and serve this amazing Stuffed Chikki to friend and family while flying kites. Your kites will never fall away after eating this awesomely delish Stuffed Chikki..! 

Ingredients:
For Chikki;
1/4 cup Jaggery (Gor)
3 tbls Sesame seeds (Til)
For Stuffing;
1/2 tsp Ghee
2 tbls chopped Dates
1 1/2 tbls roughly crushed Almond & Walnut or Pecan
1 tbls chocolate chips or chocolate syrup
1/2 tsp Honey
Method:
For Chikki:
* Heat the heavy bottom pan on slow flame.
* Add jaggery and cook on slow flame till jiggery gets fluffy and light.
* Once jaggery gets fluffy turn off the stuff and add Til (sesame seeds)
* Mix well.
* Transfer this jiggery and sesame seeds mixture on the greased kitchen surface quickly.(Make two parts of mixture and work on it one by one to make 2 cones of Chikki.)
* Roll it thin and give it cone shape to this Chikki.
Make sure work fast to give Chikki the perfect cone shape.
* Keep the chikki on side.
For Stuffing:
* Heat the pan with Ghee.
* Add chopped Dates in it and cook till gets little soft.
* Add crushed almond and walnut or pecan.
* Add Honey and stir well.
* Add Chocolate chips or chocolate syrup and turn off the stove.
* Mix well until chocolate gets melt.
For Serving:
* Fill this stuffing into Chikki cones.
* Drizzle some chocolate syrup on it and serve.
* Enjoy it.

Vegetable Manchow Soup

        It's soup time. Yes, nothing is better than soup when days getting cold.  It's my kid's all time favorite, 'Vegetable Manchow Soup.' It's #foodiemoday #bloghop , and today's awesome challenge is #soupmoday. So why wasting time here and there. Let's start and enjoy the delicious taste of soup with family in these winter days.

Ingredients:
1/2 cup finely chopped carrots
1/2 cup finely chopped cabbage
1/4 cup finely chopped green beans
1/4 cup finely chopped mushroom(Optional)
2 tsp finely chopped garlic
1/2 tsp finely chopped ginger
1 tsp finely chopped celery
1 tsp finely chopped green chilies
1 tbls dark soy sauce
1tsp red chili sauce
1 tbls vinegar
salt to taste.
3-4 tsp cornflour or cornstarch
4 cups vegetable stock
1-2 tbls oil
4 tbls finely chopped green onions

Method:
* Take cornstarch in a bowl.
* Add 1/2 cup of vegetable stock in it and mix it  well. Keep aside.
* Heat the pan with oil.
* Add garlic, ginger, celery & green chilies.
* Sauté till garlic gets brown in color.
* Add carrots and cabbage, mix again.
* Add green beans and mushrooms.
* jut mix them. don't cook too much.
* Add salt, soy sauce and red chili sauce, mix well.
* Add vegetable stock.
* Boil it.
* Add vinegar and cornstarch mix.
* Keep stir it.
* turn off the stove when soup gets little thick in consistency.
* Add chopped green onions.
* Serve it hot.
* Enjoy.
 Good Character Like Good Soup Is Usually Homemade...
