Terrific Trio Shrikhand Tart

     Diwali is incomplete without authentic sweets or dessert, and today I am going to share an authentic Indian dessert with some fusion twist, to make your celebration more bright, colorful and delicious. It's all about 'Terrific Trio Shrikhand Tart"!!!! Totally Yummy.,,hummm!!!!

         Today's recipe is again #diwalispecial. On this heavenly occasion, I would like to share a recipe which has 3 different variations. Yes! you read it write. 3 in 1 recipe. Open your imagination and make this recipe with lots & lots variations too. I am going to share Kiwi & Blueberry Shrikhand Tart recipe today. Shrikhand is one of the famous Indian dessert. It is a most popular dessert in Gujarat and Maharastra but, nowadays everyone knows about Shrikhand. There are some interesting variations in this recipe. Normally Shrikhand is made with yogurt, sugar, cardamom and saffron milk. I love this dessert mainly because it is easy and uses simple ingredients.  I just serve this Shrikhand with some twist. The twist is "tart", I'm going to serve this sapid Kiwi & Blueberry Shrikhand on Tart. Something new for family and friends on this Diwali. Hope you will enjoy it too. With festivals around the coener I have been busy making snacks and sweets.:)  Glancing at my drafts I found this simple recipe and decided to bring it to light on this bright Diwali festival. I made Kiwi Shrikhand and Blueberry Shrikhand. Besides these two, I thought to combine both kiwi and blueberry puree and made another flavor of Shrikhand, kiwi-blueberry Shrikhnad and believe me it came out heavenly yummy. I insist you all to try this recipe for sure. So let the festival season with some sweet, shall we?

Ingredients:
For Shrikhand;

3 cups Greek yogurt 
1 cup Regular yogurt
9-10 tbls Sugar powder(add as per taste)
For Kiwi Purée;

2 chopped Kiwis 
3-4 tbls Sugar powder(add more if needed)
For Blueberry Purée;

1 cup Frozen or Fresh Blueberries 
3 tbls Sugar powder(add more if needed)
For Serving;
8 Tart Shells
Method:
For Shrikhand;

* Line a muslin cloth on the deep bowl.
* Pour both kind of yogurts on it.
*Tie one edge of muslin cloth tightly around the rest.
*Gently press and you will see the whey dripping.
* Hung the muslin cloth in your refrigerator overnight.
* Next day,  can see solid hung yogurt.
* Take lots of paper napkins or news pappers and put muslin cloth with hung yogurt on it.
* Cover it with pappers again and put some solid weight on it.
* Leave it like that for about couple of hours.
* Now Transfer hung yogurt in to mixing bowl.
* Add sugar powder.
* Stir lightly.
* Using an electric beater, begin to whip the hung yogurt.
* Whip till smooth.
* The sugar should also dissolve. Check the taste and add more sugar if required.
* Chill Shrikhand in fridge for a while.
For Kiwi Puree;

* Mix crushed kiwis and sugar powder in a non stick pan and cook till the mixture thickens or becomes pulpy. Most probably cook about 7-8 minutes on medium heat.
* Transfer this mixture into a bowl and cool it down in the fridge for 4-5 hours or overnight.
For Blueberry Puree;

* Mix crushed blueberries and sugar powder in a non stick pan and cook till the mixture thickens or became pulpy. Most probably cook about7-8 minutes on medium heat.
* Transfer this mixture into a bowl and cool it down in the fridge for about 4-5 hours or overnight.

For Serving:
* Divide Shrikhand into 3 parts and keep into 3 different bowls.
Kiwi Shrikand Tart:

* Add 1-2 kiwi puree into one part of Shrikhand.
* Mix well and keep it in fridge additionally for at least 20 minutes.
Blueberry Shrikhand Tart:
* Add 1-2 blueberry puree into second part of Shrikhand.
* Mix well and keep it in fridge again for at least 20 minutes.
Kiwi & Blueberry Shrikhand Tart:
* Add 1 tbls of kiwi puree and 1 tbls of blueberry puree into third part of Shrikhand.
* Mix well and keep it in the fridge additionally for at least 20 minutes.

* Fill Tart with different flavor of Shrikhand in each.

* Garnish with fresh blueberries and kiwis.

* Enjoy fullest.

Note: You can keep Shrikhand in fridge or freeze it for long and enjoy anytime.

Cereal-Oats Chivda

       This Diwali, goodness of health ki shuruat, healthy recipe ke saath! Sweets and Snacks are the heart and soul of any Indian festival, specially on Diwali. Come Diwali and our household is buzzing with cries of 'let's cook some sweets or snacks'! Savouries like Mathiya, Fafda, Tikhi-Sev, Cholafali, Mathri, Chakli and Chivda are favorites that will be highly visible during this festive season. Let's gear up this Diwali with some healthy snack, like "Cereal-Oats Chivda" and make your Diwali healthy in real mean. Yes, today I am going to share recipe about "Cereal-Oats Chivda", after some hearsay.:) 
Diwali, the festival of lights is the brightest and most sought after all Hindu festivals. It spreads over five days when it practically illuminates the entire country with scores of lights and fireworks. It spreads joy and sense of camaraderie that engulfs friends and foes alike with a lot of love and goodness. It is not only a festival of lights that illuminates love in our hearts, it is also a festival that touches the roots of our souls with sweetness. Let's celebrate this divine festival of Diwali with some healthy recipe. Such like today's "Cereal-Oats Chivda". In #foodiemonday #bloghop, our today's challenge is #snackdiwalispecial.
 This is my the most favorite snack at anytime during the day. It is baked snack. It has lots of cereals. It has oats. It has flax seeds. Omg! fully loaded healthy snack. So what is the best homemade snack that can be serve to your family and friend this Diwali? As simple as this recipe, It's "Cereal-Oats Chivda". Here is the recipe,

Ingredients: 
3 cups corn flakes cereal
3 cups rice krispies cereal
2 cups Oats
1/4 cup thin sev
1/4 cup fried potato sticks
1/4 cup fried chana dal
1/4 cup spicy boondi
1/2 cup oil
1/2 tsp cumin seeds
1/2 tsp mustard seeds
1/2 cup mix of almond slices, raisins and peanuts
6-8 curry patta laves(limdo)
1 tsp red chilli powder
1 tsp garlic powder
1/2 tsp turmeric powder
1 tsp fennel seeds
1 tbls flax seeds
1 tbls sugar
Salt according to taste.
Method:
*Preheat oven on lowest tempreture. (170 degrees f.)
* Mix both cereals and oats in large baking tray. (broke some corn flakes cereal from your hand) 
* Keep cereal mix tray in pre heated oven on 170*f. 
* Heat the oil in heavy bottom pan on very slow flame.
* Add mustard and cumin seeds.
* Once seeds gets cracked add almond slices and peanuts.
* Stir continuously. 
* Add curry patta(limdo) and salt & garlic powder stir it.
* Add red chilli powder and turmeric powder and mix well.
* Add fennel seeds and flax seeds.

* Add sugar and mix, cook until almond slices gets little brown color.
* Turn off the stove and add raisins as well.
* Stir nicely. 
* Take out the cereals and oats mix tray from oven.
* Pour the oil mixture on cereals mix.
* Add fried potato sticks, thin sev, fried chana dal and spicy boondi into Chivda.
* Mix everything very well.
* Slide the chivda tray into the oven again.
* Bake this cereal-oats chivda on lowest temperature(170*f) for about 30-45 minutes.
* Keep stirring every 5-10 minutes in between and make sure keep eye on it.
* Crisp and healthy chivda is ready to eat anytime.
* Enjoy and stay healthy.

   
Note: You can add more variety of cereals, according to your choice. Also add or subtract dry snacks according to your choice too.

Spooky Boo Brownies

                   Trick or Treat!!! Of course it's a treat, and that too a delicious one for Halloween special. I promise, not to scare you away rather you will leave with a sweet tooth in mind:)=
       On the mark of any festival, my mind gets buzzing for the recipes, crafts and tons of ideas! Today's recipe is one of a kind inspires by Betty Crocker recipe. The Halloween brownies are like a custom in my home every year since my "bachhas" were babies. And so I thought, and pretty sure that your kids will be love this too. So what are you guys waiting for...? Get up and give trick and treat(both) to your kids.
        Get ready for some "Spooktacular" fun and scrumptious eating is coming your way!!!!
Ingredients:
1 box Brownie Mix
1 cup White Chocolate
15-16 Large Marshmallows
1 tube black decorating gel or melted dark chocolate for make eyes and mouths

Method:
* Pre heat the oven and follow the direction on Brownie Mix Box.
* Bake the brownies.
* Heat the white chocolate in microwave and melt it.
* Cut completely cool, brownies in pieces.
* Top each brownie with 1 large marshmallow.
* Spoon 1 tbls melted white chocolate over each marshmallow to coat.
* Let stand until white chocolate is set.
* Use black gel or chocolate chips or melted dark chocolate to make eyes and mouths.
* Enjoy it.

Pavbhaji Pizza

     After all, we have all heard this..."East is East and West is West and never twain shall meet..." But I beg to differ when it comes to Pavbahjai Pizza!!! Yes, today's fusion recipe is again about pizza with some Indian street food touch. For most Desis, Pavbahji is a well-known dish that most of us have feasted on childhood, even though the recipe might vary slightly in every household. And, Pizza???... hummm again, the most favorite in all over in the world. The combination is just mouth watering!! So let's try two such diverse foods in the same breath. Believe me, it will be royal pizza treat for you.

" Fusion food as a concept is kind of trying to quite consciously fuse things that are sometimes quite contradictory, sometimes quite far apart, to see if they'd work."
Ingredients:
1cup Pavbhaji (just bhaji)
2thin Pizza crust/base
1cup Grated Mozzarella Cheese(I used Amul cheese)
1/2cup Chopped Onions-Cilantro
1/2 Fresh Lemon
For green chili sauce;
5-6 Fresh Jalapeño Peppers(or any green chilies, according to how much spicy you want)
2 Cloves Garlic
1tbls Oil
Salt to taste
Method:
For green chili sauce;
* Crush the Jalapeño peppers along with garlic.( Crush roughly, don't make smooth paste)
* Heat the oil in a pan.
* Add roughly crushed green chilies and garlic.
* Add Salt and cover and cook for about 3-4 minutes on medium flame.
* Stir it in between.
* Turn off the stove and keep this sauce on side.
For Pavbhaji Pizza;
* Pre heat oven on 350 F.
* Take a Pizza crust(base) and spread half green chili sauce on it.
 
* Adjust green chili sauce according to your taste.
* Spread bhaji of pavbhaji on the sauce evenly.
 

* Sprinkle the cheese on it.
* Sprinkle chopped onions-cilantro on it.

 * Bake it in oven for 10-15 minutes.
* Pizza crush should get crispy.
* Squeeze some fresh lemon juice on top of the pizza. 
* Serve yummy Pavbhaji Pizza immediately.
* Repeat the same method, and make another pizza by using second Pizza crust(base).
