Pav-Bhaji Pasta

     Here's the most luscious and interesting recipe for all you cooking enthusiasts out there!! Serve the goodness of Pasta and wholesomeness of Pav-Bhaji with this rich aggregate to the dinner table. when an all-time favorite Desi snack crosses paths with a popular Italian dish, the result is this fascinating Pav-Bhaji Pasta!!

Ingredients:
1 cup Boiled Pasta
1/4 cup Chopped Carrots
1/2 cup Chopped Onions
1/4 cup Chopped Bell peppers
1/2 cup Chopped Tomatoes
1/2 cup Boiled & mess Potatoes
1/4 cup Blanched and chopped Cauliflower
1/4 cup Blanched Peas
1/4 teaspoon Chaat masala
2-4 tablespoon Butter
1-2 teaspoon Pavbhaji masala
1/2 teaspoon red chili powder
1/4 teaspoon turmeric powder
1-2 tablespoon lemon juice
1 tablespoon red chili-garlic paste(sauce)
Salt to taste
Couple of tablespoon grated cheese and some cilantro for garnishing.
Some water
Method:
* Heat the pan and add 2-3 tablespoon Butter.
* Add chopped onions and saute until gets light pink in color.
* Add chopped carrots, bell peppers, tomatoes and cook well.

* Add red chili powder, turmeric powder, chaat masala and pavbhaji masala.
* Saute well.
* Add boiled and messed potatoes, blanched peas and blanched cauliflower. 

* Add little amount of water and mess all the vegetable very well. (add more water if needed)
* Add red chili-garlic paste and lemon juice along with Salt.
* In another pan heat the 1 tablespoon butter and toss the boiled pasta in it.
* Add buttery Pastas into mixed vegetable and mix well.

* Turn off the stove and serve the Pav-bhaji pasta with garnishing of grated cheese and chopped cilantro.
* Serve the Pav-Bhaji Pasta with some garlic bread.

* Enjoy.

Blueberry-Mango Marble Froyo Bars

 Dipped in hues of love and trust has come the festival of Holi. Let the colors of Holi spread the message of peace and happiness with this colorful recipe..

Holi--the festival of colors, marks the beginning of spring season and is celebrated in different parts of India though the rituals and customs to celebrate this festival vary from one region to another, the spirit of festivity remains the same. Holi is one festival, where people tend to forget their grudges and misunderstandings and welcome each other in their lives with warmth and love..

Ingredients:
For Blueberry Froyo:
1 cup greek yogurt
1/2 cup blueberries
Sugar as taste
For Mango Froyo:
1/2 cup greek yogurt
1/3 cup chopped mango
Sugar as taste
Method:
For Blueberry Froyo:
* Pour all the ingredients of blueberry froyo in a blender and make smooth puree.
For Mango Froyo:
* Pour all the ingredients of mango froyo in a blender and make smooth puree.
Freezing Method:
* Line a loaf pan with parchment paper and spread blueberry smooth puree evenly inside.

* Top with 5-6 tablespoon of mango smooth puree on it.
* Use a clean bread knife to gently swirl on the puree.
* Cover with the cling film and freeze overnight or until solid.
* Cut into bars, once froyo gets solid.

* Blueberry-Mango Marble Froyo bars are ready to eat..

Taco Chaat

      Lip smacking Taco Chaat recipe today.  Quintessential Indian Street food, the 'Chaat'- gets a morden makeover in this Taco Chaat recipe. A fashionable and Chatpati Chaat for typical NRI's.:) -- By the look of it, I'm pretty sure you'd agree it deserves making to the next party table..

 So, here is my entry for our #foodiemonday #bloghop..Of course today's challenge is #chaat..

Ingredients:
6-8 Taco Shells
2 Boiled and chopped med. Potatoes
1/2 cup Chopped Onions
1/3 cup Chopped Tomatoes
1-2 tbls Sweet corn
1 tbls Chopped green grapes
1 tbls Pomegranate seeds
2 tbls Chopped Cilantro
Chopped green Chilli  to taste
Chaat masala to taste
Red chilli powder to taste
1/2 cup Sev
1/3 cup Spicy Boondi
1/2 cup crushed Cheetos
1/2 cup Sweet yogurt
1/3 cup Sweet Tamarind Chutney
1/3 cup Spicy Cilantro(coriander) Chutney
2-3 tbls Spicy Garlic-Red chilli Chutney
Method:
* In a large mixing bowl take the chopped potatoes, onion, tomatoes, pomegranate seeds, chopped green grapes, chopped cilantro, green chilies and sweetcorn.

* Toss them and dress with some chaat masala and red chilli powder.
* Add all three Chutneys according to your taste in the mixture and mix them well.
* Add sev, spicy boondi and crushed Cheetos in mixture and toss them again.
* Adjust spicies and chutneys according to your taste.
* To assemble, scoop the mixture filling into each taco shell, then add about 1 tbsp curd on top.
* Follow up with little drops of green chutney, garlic chutnney and  tamrind sauce (Imli chutney),according to your taste.
 * Sprinkle some chopped cilantro and crushed Cheetos, sev and boondi.
* Sprinkle some chaat masala and red chilli powder.

*Serve them immediately.

Notes:
-Do not make this in advance and keep it, for it will go soggy.

-Adjust spices to your taste.

Idli-Sambhar Pizza

      Yes, you heard it right-- Fusion dining is in.! Fusion cuisine is always a delight for me! Personally I enjoy making fusion foods the most. It creates magic and is fairly easy to do..This recipe is South Indian-Italian fusion healthy pizza recipe to enjoy the union of both south-Indian and Italian spices..'Idli-Sambhar Pizza"!! Humm, sounds already yummy, right?  I am pretty sure you are going to love this spice-enriched version of this Pizza.  This is the hit version of pizza in my family. A successful fusion is the one that can discover unheard of combinations and that can please most palates!!--And here it is so, without further elaboration, here is the recipe.....:)

Ingredients::
15 Idlis
For sauce;
1/4 cup chopped onions
1 teaspoon garlic & green chili paste
1/4 cup chopped green onions
1 cup pizza sauce or tomato puree(I prefer Pizza sauce)
1 tablespoon ketchup
1 tablespoon red hot chili sauce or Sriracha sauce or thai sauce ( I used sriracha sauce)
1 teaspoon red chili powder
2 tablespoon Sambhar masala
1/2 to 1 teaspoon sugar
Salt to taste
for Garnish;
1 cup of mix chopped onions, chopped bell-pepper, chopped cilantro, chopped pickle jalapeño
1/2 teaspoon dry red crushed pepper 
1/4 teaspoon Italian mix herb seasoning(optional)
1/2 to 1 cup grated mozzarella cheese 
Method::
For sauce;
* Heat the oil in a pan on medium heat.
* Add chopped onions and garlic & green chili paste.
* Cook for a minute.
* Add chopped green onion and cook for another a minute.
* Add pizza sauce or tomato puree, mix and cook.
* Add ketchup and sriracha sauce, mix well.
* Add sambhar masala, red chili powder, salt and sugar.
* Mix and turn of the stove.
* Blend the sauce with hand blender. (this is optional step)


Assemble the Pizza;* Pre-heat the oven on 180*c.
* Take one Idli.

* Spread little sauce on it and spread some grated cheese on it.


* Arrange some mix of chopped onions, bell-peppers, cilantro and jalapeño.


* Sprinkle some dry red crushed pepper along with Italian seasoning.* Garnish all Idlis like this.


* Greased the baking try and arrange all Idlis on it.* Bake all Idli-Sambhar Pizza on 180*c for about 5 minutes.
* Serve them hot..

* Enjoy the fusion version of Idli-Sambhar Pizza!!!!
