Fiesta Roll-Ups

           "Keep Calm and Picnic On.."
    Here, I'm back with some awesome bits which are great for summer picnic or even great for Kid's school lunch box. Packing a picnic is kind of like packing lunch. Sure, you could make a meal out of baby carrots and chips, but that's no fun.;) For some of us, eating outdoor is rare treat, so why not make it even more special by packing a rear recipe.? - Fiesta Roll-Ups: portable, best served cold or at room temperature, and easy-peasy to make ahead in no time..

Ingredients::
4 large flour tortillas (Burrito sized tortilla)
8 oz cream cheese (room temp.)
1/2 cup cheddar and american mix shredded cheese or Mexican cheese
2 tablespoon chopped bell-peppers(any color)
2 tablespoon chopped onion
2 tablespoon chopped lettuce
2 tablespoon chopped cucumber
2 tablespoon chopped green onion
1 tablespoon chopped tomatoes(no seeds)
1 tablespoon chopped cilantro
1 tablespoon pickle jalapeño
1 teaspoon crushed garlic or garlic powder
pinch of Salt
1/2 teaspoon crushed black pepper
1 teaspoon Taco seasoning
Method::
* Mix all the ingredients (except Flour Tortillas) in a big mixing bowl.
   
 
 
* Take one flour tortilla and spread this cream cheese mixture evenly all over on tortilla.
 
* Roll up tortilla tightly.
 
* Chill in the refrigerator for half and hour. (optional)
 
* Slice the chilled, rolled tortillas into 3/4' in slices and arrange on a large serving platter.
 
* Perfect bites for Picnic.:)


Variation Notes:
* Use bread slices instead of Tortillas.(roll the bread slice and spread the mixture and roll)
* Use tomato or spinach tortillas for color roll-ups.
* Use your choice of vegetables with cream-cheese, like olives, carrots, cabbage.
* Great for Kid's school lunch box.

Fruits & Yogurt Parfaits

    Healthy, delicious Fruits & Yogurt parfaits are layered with fresh peaches & oranges, vanilla flavored yogurt, some your favorite granola and fresh kiwis & pears for a lovely morning breakfast or afternoon snack or sweet treat for kids.!! Amazing, Hummmm!!!!

    Welcome back to another #foodiemonday #bloghop. Let's enter with this super healthy and kid's friendly recipe into today's # tricolor challenge. It's Republic Day for India. "May the Indian tricolor always fly high... Warm wishes on, the grand occasion of India's Republic Day." Today's recipe is totally dedicated to all Indians all over the world.

     There are endless possibilities in Parfaits' Recipe. I'm sharing my Daughter's favorite Parfait as a after school snack. She just love these combinations of fruits and yogurt with her favorite Granola bar. You can use any Granola or Cereal in this recipe but, I used Granola Bar(crumbled it) because my kids love the Granola Bar anytime. So just open your imaginations and try out this recipe with your favorite fruits, granola and flavored yogurt. Layer the ingredients into a glass container, starting with fruits and ending with fruits. I think the combination of peaches & oranges with kiwi & pear is especially tasty and pretty because it has sweet and sour flavors in it. When you combine this with soft vanilla flavored Yogurt, it will be heavenly delicious!
Ingredients:
For 2 servings:
1 cup Mix chopped kiwis and pears
1 cup Mix chopped peaches and oranges
1 cup Vanilla flavored yogurt
2 Granola Bars
some honey and color sugar for top of glasses
Method:
* Dip tops of glasses in to honey, then colored sugar. Set them aside.
* Crumble granola bars and keep on side.
* First layer mix of chopped kiwis & pears  in any glass.
* Pour vanilla flavored yogurt on it.
* Layer crumbled granola bar on yogurt.
* Layer mix of chopped peaches and oranges.
* Serve with spoon-they are good to the very last bite:)

Variations Note:
   As I said, this simple recipe has endless variations so here are some::
- Use plain yogurt in place of the vanilla yogurt.
- Use any fruit flavored yogurt in place of vanilla yogurt.
- Use any granola or cereal or oats in place of granola-bar.
- Drizzle some honey on cereals or oats or granolas - Use some honey, if you are using plain granola or cereal.
- Use other combinations of fruits.
-Use some chopped nuts on the fruits.
-Topping with chai-seeds or Flax-seeds on top.      Be thchange you want to see in this world & feel proud to be an Indian...

Popcorn Bhel

          Yes! Phir bhi dil hai Hindustani...Again, I'm back with my all time favorite Fusion Recipe. Guess what..? Correct, it's fusion chat recipe, "Popcorn Bhel"!!!
 Fusion food is all about bringing together the best of two cuisine to create a dish that is in the true sense-A new world cuisine. I almost like all kind of cuisines from world as far as they are vegetarian. But still always wants some Indian flavors and Indian touch in any amazing food. True, it's funny, but that's me.:) Popcorn Bhel, the name is enough to know about the recipe. Definitely a choice of new generation. This recipe has no rocket science. Just need some regular ingredients with popcorn and here you go for awesome and relax day ahead. Another weekend-special recipe for you all. Just try it this weekend and make your weekend special with this chatpata bhel. Popcorn Bhel is as easy as "Pop-Pop"...,get up and pop your popcorn with some other preparation and done deal for relax weekend with sharp taste of Popcorn Bhel. You will feel each ingredient's taste on your tongue all weekend long. I would say definitely give it a try. Let's taste a titanic twist Popcorn Bhel!!!!

Ingredients:
For Chutney or Sauce;
1tbls oil
1cup Diced onions
2cloves of Garlic
1cup Diced tomatoes
1tbl Red chili powder
1/2tsp Oregano
1tsp Red crushed Pepper(red chili flaks)
Salt to taste
1tbl Ketchup(if you don't have Sriracha sauce and maggi ketchup, use 2tbls Ketchup
1tsp Sriracha hot chili sauce
1/2tbl Maggi masala chili ketchup(spicy chili sauce)
3tbls Hot & Spicy cheddar cheese sauce(you can use any spread cheese) 
1tbl Cream cheese
For serving;
150grms Popped popcorn(2-3 bags unpopped)
2tbls Boiled-chopped potatoes
2tbls Chopped onions
2tbls Chopped tomatoes
1tbls Chopped bell peppers
1tbls Chopped cilantro
For garnish;
1/4 cup mix of chopped onion and chopped bell pepper along with some red crushed pepper and oregano.
Method:
For chutney or sauce;
* Heat the pan with oil.
* Add diced onions and garlic cloves in it.
* Cook for about 3-4 minutes.


 
 
 
 
 
 
 
 
 
 
* Add diced tomatoes and sauté.











* Add salt, red chili powder, red crushed pepper  and oregano.











* Mix all and cook for a while.











* Turn off the stove and keep the pan on stove for about 1 minute.
* Transfer all into a grinder cup.
* Grind all and make smooth paste.











* Transfer paste into a bowl.











* Heat cheddar cheese sauce and cream cheese for about a minute or till gets smooth liquid texture.











* Add cheese sauce into paste and mix.











* Add ketchup, sriracha hot chili sauce and maggi masala chili sauce into paste and mix well all together.
* Keep on side for serving time.











For serving;
* Take big mixing bowl.
* Add popcorns, chopped onions, boiled chopped potatoes, chopped tomatoes, chopped bell pepper and chopped cilantro.











* Mix well.
* Add 3-4 big serving spoons of chutney or sauce.











* Mix all well.











* If you need more chutney or sauce, add it according to your taste.
* Garnish with some chopped onions, bell peppers, red crushed pepper and oregano.
* A very unique sweet and savory and chatpati dish is ready to serve.
* Enjoy!!!!

Spinach-Chutney Sandwich

                    "You can make any meal into a sandwich, and any sandwich into a meal." -jeff Mauro
           How true is this.! Sandwich, itself has so many variations. And the great thing is any kind of sandwiches are the best for anytime and or anybody. Kid's love to eat sandwich all the time. and this is one of the best recipe for fuzzy kids, who don't like to eat spinach at all. This recipe also best for kid's lunch box. "Spinach-Chutney Sandwich" has all the healthy ingredients in it. I usally pack this sandwich to kid's lunch once in a week. It boost your energy and mood for a day. Spinach is one of the healthiest food in the world. Try this "Spinach-Chutney Sandwich" once and you will fall love in spinach again.
          So let's gear up our energy and protein with this healthy version of spinach-chutney sandwich.


Ingredients:
2 medium size Boiled and grated potatoes
1 tbls Butter
1 cup Chopped onions
1/2 cup Chopped red/Green bell pepper
1 tsp Green chili paste
1 tsp Garlic paste
2 cups Chopped spinach
2 tbls Green cilantro chutney
Salt to taste.
12 slices Bread
Butter

Method:
* Heat the pan, add butter in it.
* Add chopped onions and sauté.
* Add green chili, garlic paste.
* Cook for couple of minutes and spinach and chopped bell pepper.


















* Cook for another 1-2 minutes and add boiled and grated potatoes.



















* Add green cilantro chutney in it.



















 * Mix well and seasoning with salt.
 * Turn off the stove.


















* Spread butter on bread.




















* Apply about 1-2 tbls of potato-spinach filling on bread.




 













*Spread butter on another bread and close the sandwich.


















* Spread butter on both sides of sandwich and grill it.
* Serve it with ketchup.

Veg. Loaded Parathas

      I know, vegetables are not very likable in kid's but I also know kids always like Parathas. So let's try to feed them Parathas with lots of vegetables, and I'm pretty sure that they will like it and ask more for this Parathas.
         
Not only kids but all age people would like to eat this Veg. Loaded Prathas any time for sure.
      Parathas are basically from northern side of India, but now with lots of variation Paraths are famous all over in India and overseas too. I love to eat parathas. There are no talks at the table when parathas are on it.. My kids love to eat this Veg. loaded parathas with yogurt. And me and my hubby love to eat with pickle. I usally make a big pile of them that kids can grab and pack them for school's lunch too. Parathas can be eaten as a breakfast or tea-time or lunch and dinner, choice is yours. So get ready to try something new this time.
Ingredients:
2 1/2 cups Wheat flour
1/2 cup Besan flour
1 tbls Oil
1 tbls Ginger, garlic and green chili paste
1 tsp Red chili powder
1/2 tsp Turmeric powder
1 tsp Ajwain
2 tbls Finely shredded carrots
2 tbls Finely shredded beet
3/4 cup Finely shredded cabbage
3/4 cup Spinach puree
Salt according to taste
Method:
* Combine both flour and mix well.

* Add salt, turmeric powder, red chili powder and ajwain.
* Add oil in it and mix.
* Add ginger, garlic and green chili paste.

* Add shredded carrot, beet and cabbage.



* Combine all. 
* Add spinach purée(Boiled and blanch spinach real fast and crush them with out water).

 
*Make dough with the help of purée.

* Make dough like Parathas and add little milk if needed.

* Roll the Parathas with help of dry flour.

* Heat the tawa, place paratha on it. 
* Shallow fry Parathas applying, ghee or oil on both sides.

* Serve Parathas with yogurt and pickle.
