Khasta Roti

                        "Indian Flat Bread....!" One particularly indispensable part of Indian menu is the quintessential roti called chapatti, rotli, phulka, poli and so forth. Imagine a typical Indian meal without roti? Or it's other versions: Parathas or puri? It is certainly an art to be mastered. And practice makes it perfect. In fact now that the world is awakening to nutritious and fiber rich 'brown' bread, we can proudly say that Indians have the best 'brown' bread that is the roti!(indian flat bread). I'm going to use wheat flour in this recipe, but you can use all purpose flour (maida) as well. Khasta roti is a mouth watering crispy recipe. Learn how to make/ prepare Khasta Roti by following these easy steps.

Ingredients:
1 cup wheat flour 
1/2 cup semolina (rawa)
1/4 tsp fennel seeds
1/4 tsp carom seeds(ajwain)
1 tsp sugar
4 tbls ghee
1/2 tsp crushed black pepper
salt to taste
Method:
* Place the all purpose flour,semolina, fennel seeds, crushed black pepper, sugar, salt, carom seeds in a big mixing bowl.
* Mix all well.
* Add 2 tbls ghee.
* Add some water and knead the dough.
* Add remaining ghee and knead for some more time.

* Divide dough in equal parts and make small balls from them.
* Roll them out into thin round rotis.
* Cut them in to your favorite shapes.(Optional)

* Heat the pan.
* Place the rotis on pan and smear a little ghee on them. 
* Turn them over and smear some ghee on the other side too.

* cook on low heat till rotis are crisp.

* Serve hot.
* Enjoy.

Chinese Pav-Bhaji

  "Pav-Bhaji" is one of my favorite comfort food, second Chinese is also my favorite cuisine. So why should we wait for something else? Let's combine both of my favorite stuffs and cook some extremely addicted, marvelous dish, "Chinese Pav-Bhaji".....The demand for Chinese food is growing at a very fast pace. This entire furore about Chinese food could make one wonder, what is so special about this cuisine. Well, the answer is if one has to put it in one word, it is wholesome. But Chinese made  by any Indian, comes with their own story! We all have our very own version of Chinese food.  In fact, innovations are to be seen in every where.  The acceptance of Chinese food has added new dimensions to the variety of food offered in Indian eateries. It is here to stay. No dout about that!

   Fusion food or fusion cuisine is always my personal favorite. I love to combine 2 or more than 2 cuisines in one dish. Believe me it always come out super delicious if the spices, measurements and timing are perfect. Today's recipe is real mouthwatering to them who love to eat 'chatpata' food. Chinese Pav-Bhaji is jiffy and delicious so double bonus in it too:) Get ready for this fantastic fusion recipe...!
Ingredients:
2 cups finely shredded Cabbage
1 cup finely sliced  Onions
1/2 cup finely sliced Bell-peppers(I used all color bell-peppers)
1/4 cup shredded Carrots( I didn't use it)
1/4 cup chopped Green Onions
1 Cup boiled & grated Potatoes
1 1/2 cup boiled Noodles
1 tsp Garlic paste
2 sliced Green chilies
1 tbls Schezwan chutney or sauce(I used Ching's brand)
1 tbls Manchurian stir fry sauce(I used Ching's)
1 tsp Pav-bhaji Masala
1/2 tsp Vinegar
1 tsp Soya sauce
1 tbls Butter
1 tbls Oil
Salt to taste
Cilantro, slices of bell-pepper and some grated cheese for garnish
For Buns;
5-6 tbls room temp.butter
1tbls Schezwan chutney or sauce 
Method:
* Heat the pan with butter and oil.
* Add onions and green chilies and sauté for 1-2 minutes on medium-high flame.
* Add garlic paste.
* Add all vegetable(cabbage, carrots bell-pepper & green onions) and again mix and cook for about 2 minutes.
* Add schezwan chutney or sauce and Manchurian stir fry sauce and mix well.
* Add boiled noodles and boiled & grated potatoes along with pav-bhaji masala.
* Add salt, soya sauce and vinegar.
* Mix well.
* Turn off the stove.
* Garnish with some chopped cilantro, slices of bell-peppers and grated process cheese.
* Serve hot with some schezwan buns.

For Buns;
* Mix room temp. butter and schezwan chutney well.
* Apply on each buns and cook it on grill or pan till gets little crispy.

* Serve it hot with Chinese Bhaji.
* Rock the world.

Cracked Wheat & Oats vegetable Khichdi

      I can't believe it's December already. This year has completely flown by- and soon it will be 2016! Before we head into the new year, I wanted to make sure one thing that you all eat healthy and stay healthy for ever. For many people, eating healthy is a chore. When the world is filled with all junkie food, why in the world we ever bother eating a healthy meal? But also eating healthy food is actually delicious-- no lies. If you don't know where to begin when it comes to making healthy food choice-- or if you are already following a healthy, wholesome diet but need some new recipe idea--I have one super healthy recipe to share with you all today. It is Cracked Wheat & Oats vegetable Khichdi. Sounds already healthy, right?!

      When this week's #foodiemonday #bloghop challenge of #onepotmeatmoday comes up, I was pretty sure about sharing this easy and healthy recipe. Let's set go.. Going to be part of #foodiemonday #bloghop with healthy one pot meal.

Eat better NOT less....

Ingredients:
1/2 cup cracked wheats(fada)
1/4 cup split moog dal 
2 tbls split moog dal with skin
2 tbls Oats
2 tbls Ghee
1tsp cumin seeds
1/2 cup chopped onions 
1 cup of mixed vegetables of your choice (I used chopped potatoes, green peas, some soybeans, some green onions, some corn, chopped methi leaves, chopped cauliflower)
1/2 tsp cinnamon-cloves powder 
1 tsp turmeric powder
1 tbls ginger-garlic paste
1 tsp green chili paste
1 tsp garam masala or bisi belle rice masala
Some cashews and raisins 
2tbls Chopped Cilantro 
Salt to taste
Adjust chilies and garam masala according to your taste.
Method:
* Wash and soak cracked wheats (fada) and both dals for about 15-20 minutes.
* Heat the ghee in a pressure cooker or a big heavy bottom pot.
* Add cumin seeds and saute well.

* Add chopped onions and cook till gets tender.
* Add ginger garlic paste and green chili paste init.

* Cook for 1-2 minutes and add all mix vegetable of you choice.

* Season with turmeric powder, cinnamon-cloves powder and garam masala.

* Add soak cracked wheats and both dals.
* Mix all well.
* Add oats, raisins and cashews. Mix again.

* Season with salt and add required water.


* Mix well.

* Cover the pressure cook for 2-3 whistles.

* Garnish with chopped cilantro and serve hot with yogurt or kadhi or chaas.

Snickerdoodle Cookies (Eggless)

          Making soft, thick & puffy Snickerdoodle Cookies at home is easy. And certainly quick! Snickerdoodles cookies(eggless)-- crisp edges with soft and fresh texture with full of cinnamon flavor, extremely delicious..

         It's world #cookieday today! Cookies comes in all different shapes, flavors & size. To celebrate World Cookie Day, let's bake a heavenly luscious Snickerdoodle Cookies
        A snickerdoodle is type of soft sugar cookie dusted with cinnamon powder and sugar powder. Like sugar cookie dressed in cinnamon sugar outfit..:) That's why me and my kids love them so much, besides their amusing name of course. We just adore anything with cinnamon & sugary. when you bite into it, you will find edges are wonderfully crisp and inside texture is soft with lovely buttery sweet flavor. These cookies are often served on Christmas and actually I am going to share this recipe with you so you all can bake this on Christmas and will make your Christmas extremely special..
Ingredients:
for cookie;
1 1/2 cup All purpose flour
1/2 tsp Baking powder
3/4 tsp Baking soda
1/4 tsp Salt
3/4 cup Sugar powder
1/2 cup Unsalted melted butter
3 tbls Milk
1 tsp Vanilla extract
for coating;
2 tbls Sugar powder
1 tsp Cinnamon Powder
some small decorating candies(optional)
Method:
* Mix sugar powder and cinnamon powder and keep it aside for coating the cookies at last.

* Mix all purpose flour, sugar powder, baking powder, baking soda & salt in a bowl.
* Combine them very well.

* Mix melted butter, milk & vanilla extract in another bowl and mix well.

* Add melted butter and milk mixture to dray ingredients.

* Fold them in till you gets smooth dough.

* Chill the dough in the fridge for 30-40 minutes.
* Preheat oven to 330* F. 
* Line baking tray with parchment paper.
* Now Take out dough from fridge.
* Make smooth equal balls from dough.

* Roll all balls into prepared cinnamon-sugar mixture and coat well.
* Arrange the cookies on the baking tray, flatten them slightly.
* Bake in preheated oven for 12-15 minutes or till the edges are medium brown in color.
* Remove from oven and sprinkle some decorating small candies.
* Wait for 5 minutes.
* Remove from baking tray and let them cool down completely on cooling rack.

Tiramisu Mousse(Eggless)

            Deliciously Indulgent!! Take a moment to relax, unwind from your day and savor right now-one delicious bite at a time......
          Yes, it's #nationalmosseday today, and let's celebrate it with the best highlighted dessert ever 'Tiramisu Mousse".
          This easy Tiramisu Mousse contains my favorite part of the Tiramisu: the mousse!! It's all about the Mousse.(no cake, no egg) I absolutely love Tiramisu. I also like all different kinds of mousses too, but the combination of these too is like.. no words to describe this dessert. You have to try this super easy, fast and delicious recipe. Just a few components go into making the best Tiramisu Mousse you'll ever eat, I promise.

       Now, piles of Tiramisu Mousse in a glass? Yes.. Yes.. Yes..

Ingredients:
3-4 tbls ready instant coffee(cool down)(Use more if u like strong coffee flavor in your mousse)
8 oz. frozen cool whipped topping cream
8 oz. mascarpone cheese or cream cheese(I used mascarpone cheese)
4 oz. white chocolate
2 tbls heavy whipping cream
1/4 cup powdered sugar
1tsp vanilla extract
1 tbls unsweetened cocoa powder
some chocolate chips for garnish(optional)
Method:
* Melt the white chocolate in double boiler bowl with 2 tbls heavy whipping cream.
* Melt it and keep aside.
* Mix mascarpone or cream cheese and powdered sugar(adjust sugar according to your taste) with a hand mixer until smooth.
* Add melted white chocolate and mix it again.
* Add vanilla extract and 2-3 tbls coffee.(add coffee, depending on how strong you want your tiramisu mousse)
* Add 1tsp cocoa powder and mix with hand mixer again.
* Fold frozen cool whipped topping cream into coffee-mascarpone cheese mixture gently.
* Place the tiramisu mousse in a dessert decorative container or in a Ziploc bag fitted with alarge tip.
* Dust some unsweetened cocoa powder on bottom of the serving glass.
* Pipe a some amount of tiramisu mousse on it.
 * Dust again some cocoa powder.
* Continue layering the tiramisu mousse and cocoa powder.(I layered it sand-art style with cocoa powder)
* Once you get to the top layer, arrange some chocolate chips or dusting with some grated chocolate on top.

* Chill, covered, in a fridge until ready to serve.
*Mix, chill, pipe, repeat. That's it. 20-25 minutes to an addicting dessert.
