Fennel, Roasted Beet & Citrus Salad with Fennel-Beet Yogurt Dressing

   This delicious salad is full of dramatic colors, bright and sharp flavors, and also contrasting light textures.. This classic Moroccan salad, is the combination of fennel, beet and mandarin orange, which is perfect for a wintertime brunch.. The flavors are quite unique with fennel-beet yogurt dressing. My favorite thing in this salad is Roasted Beet! How do you feel about them? I'm into them, but they might be one of the most polarizing vegetable on the face of this earth:) clearly, I'm a fan of Beet.. And this roasted beet add extra unique taste in this Salad so, try it and believe me;) 



Ingredients::
2 small mandarin oranges (peeled and separated segments)
1 small Beet (peeled)
1/4 cup diced fennel bulb
1/4 cup chopped fennel green leafy fronds
1/4 cup diced onion
1/4 cup diced tomato
1/4 cup diced cucumber
1/4 cup roughly cut baby spinach
1/4 cup diced purple cabbage
For Fennel-Beet Yogurt Dressing:
1/3 cup bitten yogurt
1 tablespoon Olive oil
1 teaspoon fennel seeds
Salt to taste
1/4 teaspoon black pepper powder
1 teaspoon lemon juice
Method::
* First sliced the beet and grilled them on stove with drizzling little olive oil.

* Save one small sliced grilled beet for dressing.
* Diced them and keep on side.
* Take a mixing bowl.
* Add all vegetable in the bowl including grilled diced beets.
* Mix them well.
* Keep bowl aside.

For Fennel-Beet Yogurt Dressing:
* Take all dressing ingredients into a blender including one slice of saved grilled beet.
* Blend them very well.
* Keep the dressing in a small bowl.

* Toss the salad.
* Transfer into serving plate or a bowl. 
* Drizzle fennel-beet yogurt on the top of the salad. 
* Serve it. 
* Enjoy.!

Detox Blueberry Salad

        This Detox Blueberry Salad recipe, helps you lose weight, increase your energy, and the most importantly, reset your frame of mind, end craving and flush out the toxins in your system so it is easier to eat healthy and live better... So when I saw gorgeous & fresh Blueberries at the farmer's market in my town, I couldn't help but imagine them  pairing perfectly with some yogurt,nuts and greens. And So, this Detox Blueberry Salad was born..:)Look at the color! Swoon....

     I think you guys are going to love this salad. It's Summery, Healthy, Crisp, Fruity, Savory-sweet, Satisfying, Quick, Plant-based & Seriously delicious...
 Ingredients:
For salad::
3/4 cup fresh blueberries
3/4 cup finely diced Kale, Spinach & Chard mix
 1/2 cup finely diced red cabbage
1/4 cup finely diced cucumber
1/4 cup finely diced avocado
1/4 cup finely diced lettus
1/4 cup finely diced red onion
1 tablespoon any color diced bell-pepper
2 tablespoon finely diced beetroot
For dressing::
3-4 tablespoon yogurt(prefer low fat)
1 1/2 tablespoon extra virgin olive oil
1 tablespoon lemon juice
1/2 to 1 teaspoon sea salt or salt to taste
Some freshly ground black pepper
For garnish::
1 tablespoon toasted diced almonds
1/2 tablespoon flax seeds
Method:
For dressing;
* Place all dressing ingredients in a bowl and mix very well.
* You may place all ingredients in a blender and pulse to obtain a smooth liquid.
For Salad;
* Place all the salad ingredients in a large bowl and toss to combine.
* Pour the dressing over the salad and mix to combine.
* Top with toasted almonds and flax seeds.
* Serve it and enjoy it.
    Detox Blueberry Salad--The ultimate cleansing salad, filled with detoxifying red cabbage, blueberries, red onionspinac-kale-card mix and avocado, as well as a tart dressing made from EVOO and lemon juice. If I could eat only ONE salad for the rest of my life, this would be it..:) End craving, lose weight and reset your body chemistry, so it is easier to eat and drink healthier and live better.

Soybean(Edamame) Salad

               As I told you guys earlier that, I'm falling love with this soybean. I love their taste, color and the most important is health benefits of these awesomely delicious Soybean(edamame). So I'm back with Soybean Salad.
       This salad is full of protein, iron and calcium. This salad is an especially great for those who follow a plant-based diet. This salad is also high in healthy polyunsaturated fats, especially Omega-3 alpha-linoleic acid. You can eat Soybean Salad anytime during day and get full of protein for your busy days.

     It's also quick salad, so you can get health benefits of Soybean in no time. I use some other ingrdients which are also very healthy and that's why this Soybean(edamame) Salad is totally healthful and fit. Try it and believe it. Just make ready all ingredients and mix it all, this Soybean Salad is as easy as this.
Ingredients:
* 1 cup Soybean(edamame)
* 1/4 cup finely shredded carrot
* 1/3 cup finely chopped onion
* 1/3 cup finely chopped cabbage
* 1/3 cup sweet corn( I used frozen)
* 1/3 cup finely chopped fresh green grapes  * 1/4 cup finely chopped cilantro
* 1/4 cup finely chopped cucumber
* 1 clove of garlic(finely shredded)
* 1 tbls olive oil
* Pinch of black pepper
* 1 tsp red crushed pepper
* 1 tsp cumin powder
* 1/2 tbls fresh lime juice
* 1 tbls parmesan cheese(optional)
* salt according to taste.
Method:
* Heat the pot with 2 cups of water.
* Add little salt in water and bring it to boil.
* Once water is start boiling, add soybean in the water.
* Just cook for 2-3 minutes.
* Well drain soybean from water and dump them on the paper towel.
* Pat dry on paper towel.
* Take big mixing bowl.
* Add carrots, onions, cabbage, corn, grapes, cucumber, cilantro and garlic.
* Mix all together.
* Now add olive oil, lime juice, black pepper, red crushed pepper, cumin powder and salt.
* Mix very well.
* Add parmesan cheese(optional) and mix.
* Add soybean and mix well.
* Serve soybean salad at lunch or dinner or to go.

      Salad is not a meal, it is a style. So add this Soybean Salad style in to your life.
