Taco Ragdo

       Hello!! I'm back again with my all time favorite fusion recipe. I love fusion cooking. The best part though is that when it comes to fusion cooking, there are no rules to be follow!:). Today I am going to share the recipe named, "Taco Ragdo." This recipe is full of flavors. I'm sure you all will enjoy it as much as I do.
      
Fusion food is about bringing together the best of two or more than two cuisines to create a dish that is in the true sense, a new world cuisine! It not carters to brand new generation of food choice, but also gives you a chance to push the envelope on creativity a bit further with each recipe you try.
        This recipe is functioning around  india famous recipe, Ragda Petis and it team up with Mexican pizza's shell. Dosen't it sound interesting to you all?!. I know, it does.., so let's not waste the time and start effort for this fusion Taco Ragdo recipe.
Ingredients:
For Ragdo;
* 2 cups green or yellow dries peas soaked for atleast 6 hours and cooked until soft
* 3-4 tbls oil
* 1 tsp mustard seeds
* Pinch of asafetida
* 1-2 dry whole red chilli
* 1/2 cup chopped onions
* 1/2 cup chopped tomatoes
* 1 tbls ginger-garlic- green chili paste
* 5-6 curry leaves(Limdo)
* 1 tsp turmeric powder
* 1 tsp red chilli powder
* 1/2 tbls ragda petis masala or garam masala(adjust according to your taste)
* 1/2 tbls lemon juice
* 1 tsp brown sugar
* Salt to taste 
* 1 to 1&1/2 cup water

For Serving;
* 6-8 Mexican pizza shells
* 1 bowl mixed chopped onions, bell peppers, pomegranate, tomatoes and cilantro
* 1 bowl fine thin besan sev
* 1 bowl date and tamarind sweet chutney
* 1 Bowl green cilantro chutney
* 1/2 bowl red chilli and garlic spicy chutney
* 1 bowl Beaten sweet yogurt(yogurt+salt+sugar+cumin powder+little water)

Method:
* Heat the oil in deep pan.
* Add mustard seeds, add asafetida, dry whole red chilies and curry leaves.
* Add chopped onions and sauté well.
* Add ginger-garlic-green chili paste and cook for a while.
* Add tomatoes and sauté till tomatoes get tender.
* Add turmeric powder, red chili powder, ragda petis masala or garam masala and sugar.
* Mix all well.
* Add boiled green or yellow peas and water.
* Cook until ragdo gets thick constituency.
* Add lemon juice and mix again.
* Turn off the stove and keep it aside for serving.
Let's serve now:
* Place the Mexican pizza's shell on serving plate.
* Spread ragdo on it.
* Drizzle all three chutneys and sweet yogurt on ragdo.
* Sprinkle chopped onions, bell peppers, pomegranate, tomato and cilantro mix.
* And last sprinkle besan sev on top.
* Serve it immediately and enjoy the delicious fusion chaat.

Soybean(Edamame) Salad

               As I told you guys earlier that, I'm falling love with this soybean. I love their taste, color and the most important is health benefits of these awesomely delicious Soybean(edamame). So I'm back with Soybean Salad.
       This salad is full of protein, iron and calcium. This salad is an especially great for those who follow a plant-based diet. This salad is also high in healthy polyunsaturated fats, especially Omega-3 alpha-linoleic acid. You can eat Soybean Salad anytime during day and get full of protein for your busy days.

     It's also quick salad, so you can get health benefits of Soybean in no time. I use some other ingrdients which are also very healthy and that's why this Soybean(edamame) Salad is totally healthful and fit. Try it and believe it. Just make ready all ingredients and mix it all, this Soybean Salad is as easy as this.
Ingredients:
* 1 cup Soybean(edamame)
* 1/4 cup finely shredded carrot
* 1/3 cup finely chopped onion
* 1/3 cup finely chopped cabbage
* 1/3 cup sweet corn( I used frozen)
* 1/3 cup finely chopped fresh green grapes  * 1/4 cup finely chopped cilantro
* 1/4 cup finely chopped cucumber
* 1 clove of garlic(finely shredded)
* 1 tbls olive oil
* Pinch of black pepper
* 1 tsp red crushed pepper
* 1 tsp cumin powder
* 1/2 tbls fresh lime juice
* 1 tbls parmesan cheese(optional)
* salt according to taste.
Method:
* Heat the pot with 2 cups of water.
* Add little salt in water and bring it to boil.
* Once water is start boiling, add soybean in the water.
* Just cook for 2-3 minutes.
* Well drain soybean from water and dump them on the paper towel.
* Pat dry on paper towel.
* Take big mixing bowl.
* Add carrots, onions, cabbage, corn, grapes, cucumber, cilantro and garlic.
* Mix all together.
* Now add olive oil, lime juice, black pepper, red crushed pepper, cumin powder and salt.
* Mix very well.
* Add parmesan cheese(optional) and mix.
* Add soybean and mix well.
* Serve soybean salad at lunch or dinner or to go.

      Salad is not a meal, it is a style. So add this Soybean Salad style in to your life.

Pear-Basil(Indian Tulsi) Lemonade


           Lemonade is a famous drink all around the world. It's typically summer drink, but how about Pear-Basil Lemonade? 
         Have you ever tried Pear-Basil Lemonade before? If not then follow the recipe step by step and the most coolest and crisp Lemonade will be in your glass in few minutes. 
Ingredients:
* 2 fresh ripe pears(roughly chopped with skin)
* 1/3 cup freshly squeezed lemon juice
* 1/4 cup Sugar or 1tbls honey(adjust according to your taste)
* 8-10 Basil/ Indian Tulsi leaves
* Pinch of salt
* 1tsp cumin powder
* 2 cups water
* Some ice cubes
Method:
* Place chopped pears in the jar of blender.
* Add lemon juice, sugar, basil/tulsi leaves, cumin powder and salt.
* Blend the mixture until the mixture is smooth.
* Add 1 cup of water and blend it again.
* Strain the mixture into mixing bowl.
* Pour the remaining 1 cup of water and stir.
* Serve in glasses filled with ice cubes.
* Garnish with lemon.
      When life gives you lemons make lemonade...:)

Sweet and Spicy Edamame

        I am pretty sure that you all tried Edamame before. I think(actually, i'm pretty sure), I'm in love with these green soybean.
Edamame is one of the most famous appetizer in Japanese cuisine. In Japanedamame beans are often boiled in salty water still in their pods and served as an appetizer. This appetizer is pretty addictive and you can't stop eating them.
      Today I'll share you how can turn regular edamame into a Sweet and Spicy Edamame.  When you pop the edamame into your mouth, your lip touches the edamame pod that is coated with sweet and spicy and garlicky taste. I'm sure the aroma and spice excites your palate leaving you wanting more.
     When you make  this sweet and spicy edamame at home, just need to be sure of one thing: make a plate for each of you. Sharing doesn't go well with this recipe.:)=

Ingredients:
2cups Edamame(in shell)
1 1/2tsp Oil
1tsp Crushed or minced garlic
1/2tsp Crushed or minced ginger
2tbls Soy sauce
1/2tbls Vinegar(use rice vinegar if available)
2tbls Water
1tsp Brown sugar
1tbls Crushed red pepper flakes(adjust according your taste)
Method:
* Cook the edamame in microwave for about 2-3minutes.
* Take a small mixing bowl, add soy sauce, vinegar, water, red pepper flakes and brown sugar.

* Heat the oil in the pan.
* Add garlic and ginger.
* Cook for 1-2 minutes on low-medium heat.
* Stir continues.
* Add soy sauce mixture in it.
* Cook and stir until the sauce reduce on medium heat, probably about 3-4 minutes.

* Add cooked edamame and toss well.* Mix well and turn off the stove.
* Arrange edamame in the plate or bowl.
* Pour any sauce left in the pan on and alongside the edamame.
* Sprinkle some more crushed red pepper flakes if you like more spicy.

* Serve and eat right away.


          Be versatile and try all food.

Tindora Parathas

              Hello again, today I am going to share an unique combination recipe of parathas. It's just one kind of variation of stuffing paraths using Tindoras.
           I made simple and comforting parathas featuring Tindora(Ghiloda) as the star ingredient. Perfumed with cinnamon-clove powder and green chilies-garlic paste. Tindora paratha's recipe is jazzed up with some sugar and slightly squeeze of fresh lemon too. this is one of the must try kind of recipe.
            Tindoras are very famous vegetable in India and so many other countries too. Each region of India calls is by names like Tindora, Ivy-gourd, Ghiloda, Tinda, Kovaikkai, Dondaikkai or Tendly. With such a variety, each home has a way of making it too. There are so many ways to make this vegetable, but today I'm going to share some different way to eat these Tindoras. When you are running out of any quick paratha recipe to cook, don't pass out Tindora in the grocery aisle and try this simple, yet delicious paratha recipe. Time to cook now....
Ingredients:
 For dough;
2 cups Wheat Flour
1 tsp Oil
1 tbls Ghee
1 tsp Cumin powder
Salt to taste
Water as required
 For stuffing;
1 bowl Crushed Tindora
1 tbls Oil
1 tbls Green chili and garlic paste(adjust according to your taste)
1 tsp mustard seeds
1 tsp sesame seeds
1 tsp turmeric powder
1 tsp cinnamon-clove powder(adjust according to your taste)
1 tsp brown sugar(you can use any sugar)
Few drops of lemon juice
Salt to taste.
Method:
  For dough;
* In large bowl combine all the ingredients in the wheat flour.
* Knead well with water to form a dough.
*Cover it and let it rest.
 For Stuffing:
* Crush Tindoras in food processor.

* Heat the pan and add oil.
* Add mustard seeds, sesame seeds and green chili-garlic paste.
* Sauté for a while.

* Add crushed tindoras and cook for 8-10 minutes on low-medium flame or cook until the crushed tindoras are well cooked.
* Add cinnamon-clove powder.
* Add sugar,salt and some lemon juice.

* Mix well.
* Turn of the stove and let it cool down.

  For Paratha;
* Divide the paratha dough in to equal parts.
* Roll the dough half way in round shape.
* Fill stuffing in to paratha and cover it.
* Seal the edges completely.

* Roll it again and make paratha.

* Heat the tawa, place paratha on it.
* Cook on moderate heat for 2-3 minutes.
* Turn it and pour half tbls oil or ghee or butter, spread it on paratha and shallow fry over low heat.
* Turn it and again pour half tbls oil or ghee or butter on other side.
* Cook on low heat till gold brown.
* Serve hot with yogurt or garlic chutney or onion or fry green chili.
