Thai Noodle Sizzler Chaat

       " Some days you just have to create your own sunshine." And I'm back with another fusion of sunshine. It's about "Thai Noodle Sizzler Chaat", name is big and procedure is big too but the  big tasteful recipe ever. This fusion recipe has twist and taste of Thai, Chinese and Indian cuisines. And I suggest this recipe as "must try once" recipe. Lots of things to do for preparation so let's cut out chit-chat here and start cooking now....

                      

Ingredients:
For Thai Paste;
3-4 Dry whole red chilies
1 tsp Cumin seeds
1 tbls Whole dry coriander seeds
2 tbls Lemon juice
1 tsp Lemon zest
1 tsp Lemon grass
1 tbls Grated dry or fresh coconut
1 tbls Fresh cilantro's stems(roughly chopped)
2 tbls Dry roasted sesame seeds
1 tsp Black pepper powder
1 tsp Chaat masala
1 tbls brown sugar(you can use regular)
1 1/2 tsp Soya sauce
1 tbls Oil
Salt as taste.
For Chaat Mix;
1 cup Chopped apple
1/2 cup Chopped bell pepper
1/2 cup Boiled or frozen corn
1/2 cup Chopped tomatoes
1/2 cup Roasted and roughly crushed peanuts
1 tbls Finely grated coconut
1 tsp Black pepper powder
1 tsp Paprika powder
1 tsp Chaat masala
2 tbls Chopped cilantro with stems
For Noodles:
1-2 tbls Butter
1/2 tbls chopped garlic
2 cups Boiled noodels
1 tsp Black pepper powder
1 tsp Crushed dry red pepper(chili flakes)
1 tbls Roasted black sesame seeds
1 tbls Chopped cilantro
Salt as taste.
Method:
For Thai Paste.
* First soak dry whole red chilies, cumin seeds and whole dry coriander seeds together for about 30 minutes.
           
* Transfer this in to grider bowl along with lemon juice,1 tsp lemon zest(keep half for late), lemon grass and coconut.
* Grind all together with little water and make fine paste.
* Transfer this paste in to a bowl.
            
* Add dry roasted sesame seeds, Chaat masala, black pepper powder, sugar, salt, soya sauce, 1tsp lemon zest and oil in to paste.
* Mix well and keep Thai paste on side.
             
* Take another big mixing bowl.
* Add all chaat mix ingredients in it and mix well.
            
* Add Thai paste in this chaat mix.
* Keep aside.
          
For Noodles;
* Heat the pan with Butter.
* Add chopped garlic and let it light brown in color.
* Add boiled noodles in it.
* Add black pepper powder, crushed dry red pepper, roasted black sesame seeds, chopped cilantro and salt.
* Mix all wel and turn off the stove.
            
For Serve;
* Heat the sizzler plate well and arrange noodles on it.
* Put chaat mix on it.
* For sizzler smoke add some drop of vinegar and some butter on  hot sizzler plate after arrange all.(optional)
                              

* Note:: If you don't want to serve as sizzler, you also can mix all together and serve it.
* Note: Dry red chilies are more spicy so adjust according to your taste, But Thai foods are spicy so enjoy.
