Instant Spinach-Methi Khaman

             Welcoming '2016' with healthy and authentic breakfast recipe with some 2016's twist.!! There are many many varieties of Khaman, like Vateli dal na Khaman, Instant Khaman, Masala Khaman and so many more. The ultimate Gujarati snack or breakfast. Today's recipe is about Instant Spinach-Methi Khaman.
               I'll share other variations of khaman and dhokla as well in coming up days.  As being Gujarati, I get very disappointed when i see or hear or read other people or any other source that says, 'Khaman-Dhokla' recipes or whatever:) Actually Khaman(made from besan) and Dhokla(made from rice&dal) are two different things. But never mind, as far as people enjoy the taste of them, let them call whatever they wants to:-))

               Today in our #foodiemonday #bloghop, we are going to share #regionalbreakfast recipes. I'm from Gujarat and I am representing Gujarati's the most favorite recipe, Khaman- A nutritious and irresistible Gujarati snack. Once a Gujarati staple, steamed and low cal dhokla are universally popular these days!! They make a particularly wholesome and light breakfast. And I added Spinach-Methi to add color and make them more nourishing.

Ingredients:
1 cup shredded Spinach
1/2 cup chopped Methi(Fenugreek leaves)
1 1/2 cup Besan(Chickpea flour)
1/2 cup water
2 tbls Sugar
2 tbls Ginger-Green chilli paste
2 tbls Fruit salt(Eno)
Salt to taste
For Tadka(Tempering);
2 tbls Oil
1 tsp Mustard seeds(Rai)
Pinch of Asafetida
2 tbls chopped Green chilies
For Garnishing;
2 tbls chopped Cilantro
1/2 cup grated Coconut
Method:
* Add spinach, methi, ginger-chilli paste and water in a blender cup. And Blend well till becomes a smooth paste.
* Pour this paste in a big mixing bowl.
* Add besan, sugar and salt in it and mix again.
* Add some more water if need to be make Khaman batter.
* Mix well.
* Pour the Khaman  batter into the dish mould, till half full.
* Put the dish mould into the steamer, cover the lid of steamer and steam for 15 minutes.
* Remove the mold dishes from the steamer after 15 min. and allow it to cool down for about 10 min.
* Cut Khaman into square shapes.
* Take tempering pan, heat oil in it. and add mustard seeds,chopped green chilies and pinch of asafetida.
* Once they splutter pour the tempering over the Khaman.
* Garnish with chopped cilantro(dhana) and grated coconut.
* Serve with any green chutney.

Note: If you want to use ready made Khaman Mix(Gits) then just add shredded Spinach and chopped Methi and Ginger-Green Chili paste in that ready made flour. It will taste great too.

Chipotle-Style Veg. Bowl on Sizzler

    So, who still wants Chipotle for dinner tonight? Skip Chipotle and try this Veg. Rice Bowl on Sizzler right at home. It's easier, healthier and 1000x tastier!

      Think about Chipotle veg. rice bowl on sizzler plate... Yes, sounds like heaven for me.  A Chipotle inspired veg. rice bowl, that's bursting with spices and flavors and is healthier than take-out! I'm in love of this recipe. No, but really, with fresh veggies and rapid preparations with chipotle drizzle, what's not to love? Plus, this is completely customized to add in your favorite ingredients. Or if you're like me, you can keep it full of veggies. There's plenty of goodies to go around here!

Ingredients:
For Rice;
2/3 cup rice(you can use brown rice)
2 cups water
2 tbls chopped fresh cilantro
2 tbls oil
salt to taste
1 tbls lime juice
1 tbls lemon juice
1 tsp chipotle peppers sauce.(optional)
1/2 tsp smoked paprika powder

For Guacamole;
2 peeled and seeded avocados
1/2 seeded and miced jalapeno pepper
2 tbls chopped onions
2 tbls chopped fresh cilantro
salt to taste 
1 tsp lemon juice

For Corn Salsa;
1/2 cup corn
2 tbls chopped onions
1 tsp lemon juice
1/2 tbls chopped jalopeno peppers
1 tbls chopped cilantro

For vegetable;
1 cup sliced onions
1 cup sliced bell peppers(use all color)
1 tbls olive oil
1 tbls lemon juice
1 tsp chopped chipotle pepper(i used san marcos can)
1 tsp smoked paprika powder
salt to taste

For Black Beans;
1 cup boiled black beans
1 tbls oil
1 tsp garlic paste or garlic powder
1 tbls chopped onions
1 tbls chopped chipotle pepper(use portion according to your taste)
pinch of salt

For Topping;
2-4 tbls pico salsa
1/2 cup shredded mexican cheese
some shredded lettuces and green onions mix
Sour cream (optional)
Method:
For rice;
* Boil the water in a pan.
* Add rice & salt and cook till rice are properly done.
* Turn off the stove and fluff the rice with fork.
* Add oil and let it cool down well.
* After rice competently cool down, add lime and lemon juice and cilantro in it and mix very well.
* Add chipotle pepper sauce and smoked paprika powder and mix.

For guacamole;
* Combine all the ingredients.
* Crush avocado with help of fork and mix all.

For Corn Salsa;
* Mix all the ingredients in the bowl.

For black beans;
* Heat the oil in the pan and add chopped onions, garlic paste and chopped chipotle pepper init.
* Add cooked black beans and salt and mix.
* Turn off the stove and mix well.

For vegetable;
* Heat the oil in pan and add sliced onions and bell peppers in it.
* Add chopped chipotle peppers, smoked paprika and salt.
* cook for couple of minutes. 
or
* Heat the oven proof skillet, and preheat broiler.
* Saute onions and bell peppers with salt and chipotle chopped pepper with smoked paprika until, vegetables begin to form blackened edges.

For Assemble:
* Heat the sizzler plate well.

* Arrange some Lettuce leaves on it.
* Put desired amount of rice on a hot sizzler plate.

* Add black beans on it.

* Add vegetable on it.
* Add corn salsa and pico salsa.
* Add guacamole, sour cream and shredded mexican cheese along with some lettuce and green onion mix on top.

* Serve it with love and enjoy it.

Note: if u dont want to use sizzler plate, you may use just big serving bowl to assemble.

* Add some butter and some vinegar on hot sizzler plate while serving. It increase the smoke effect on presentation.

Vegetable Manchow Soup

        It's soup time. Yes, nothing is better than soup when days getting cold.  It's my kid's all time favorite, 'Vegetable Manchow Soup.' It's #foodiemoday #bloghop , and today's awesome challenge is #soupmoday. So why wasting time here and there. Let's start and enjoy the delicious taste of soup with family in these winter days.

Ingredients:
1/2 cup finely chopped carrots
1/2 cup finely chopped cabbage
1/4 cup finely chopped green beans
1/4 cup finely chopped mushroom(Optional)
2 tsp finely chopped garlic
1/2 tsp finely chopped ginger
1 tsp finely chopped celery
1 tsp finely chopped green chilies
1 tbls dark soy sauce
1tsp red chili sauce
1 tbls vinegar
salt to taste.
3-4 tsp cornflour or cornstarch
4 cups vegetable stock
1-2 tbls oil
4 tbls finely chopped green onions

Method:
* Take cornstarch in a bowl.
* Add 1/2 cup of vegetable stock in it and mix it  well. Keep aside.
* Heat the pan with oil.
* Add garlic, ginger, celery & green chilies.
* Sauté till garlic gets brown in color.
* Add carrots and cabbage, mix again.
* Add green beans and mushrooms.
* jut mix them. don't cook too much.
* Add salt, soy sauce and red chili sauce, mix well.
* Add vegetable stock.
* Boil it.
* Add vinegar and cornstarch mix.
* Keep stir it.
* turn off the stove when soup gets little thick in consistency.
* Add chopped green onions.
* Serve it hot.
* Enjoy.

Red Velvet Cupcakes in a Jar

           "Red Velvet Cupcakes in a Jar"!  Yes, it really is easy and makes for such a visually appealing way to dress up cupcakes, not that cupcakes need to be dressed up as the name itself is cute and enticing! This recipe is specially for them who are really obsessive for cupcakes. Enjoy this Christmas to the fullest extent with these cupcakes.
                 I really hope you enjoy this recipe and gets you in the Christmas spirit.

Ingredients:
For Cup Cake;
2 1/4 cups all-purpose flour
1 1/2 cup sugar
1 stick (8tbls) unsalted butter(room temp.)
2 eggs
1/2 cup unsweetened cocoa powder
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 cup buttermilk
1 tbls red food color(liquid)
1 tsp vanilla extract
1 tsp white vinegar
For Buttercream Frosting;
1 cup softened butter
2-4 tbls milk
1/2 tbls vanilla extract
3-4 cups confectioners sugar
1/4 tsp kosher salt
Method:
For Cupcakes;
* Pre heat the oven to 350*F.
* Place the paper liners on cupcakes baking tray.
* Take a mixing bowl.
* Sift together the all-purpose flour, cocoa powder, baking powder, baking soda and salt.
* In another bowl, combine the buttermilk, food color, vinegar and vanilla extract.
* In a big bowl or electric mixer fitted with the paddle attachment, beat the butter and sugar on medium speed for about 1 min.
* Add the eggs, one at a time, and beat until combine, on low speed.
* Add some dry flour mix and buttermilk mix one by one and some by some.
* Mix until all combined.
* Make sure the batter is mixed well.

* Scoop the batter into cupcake cups with spoon or ice cream scooper.
* Bake for 10-15 minutes, until a toothpick inserted in the centers come out clean.
* Make sure do not over bake.
* Cool completely on wire rack.

For Buttercream Frosting;
* Beat the butter with an electric beater for a few minutes.(until creamy)
* Add 3 cups powdered sugar and beat on low until the butter has absorbed the sugar.
* Add vanilla extract, salt & 2 tbls milk and beat again on medium speed.
* Beat medium - high speed for about 3-4 minutes.
* If  the frosting looks too stiff than add some milk.
* If the frosting looks too loose, than add some sugar.
* Keep it in fridge for a while.
Arrange in jar;
* Once the cupcakes cool down, place 1 cupcake in a jar.
* Put a layer of frosting, with the help of decorative tip.
* Take another cupcake and place on frosting.
* Repeat the steps as many times as you want.
* Sprinkle some crumble cake on top of frosting.
* Cover the jar with lid and package however you like!

      It will be heartbreaking to eat, as it is so pretty, but it is so yummy!
  Easy right? I know, if I can do it , than you can do it too. Try it for sure.

        Decorating your home during Christmas can be a lot of fun, especially when done with your loved ones. It is a great way to bond with family and friend. Colorful festoons, fairy lights, snowflakes cutouts, and ribbons can make the atmosphere festive.

The room is inviting,happy, light-filled and cozy. I've always felt was important is to really remember what Christmas feels like through the eyes of kids. It's Magic. It's beautiful with lots of sparkling lights all around. Collecting all the feeling at one place and sitting by the cozy fireplace is no where else but my, the living room!




Christmas is a great time for extra hugs and cuddle. 
Let's move forward to the dinning area. Keep dinning table sober & simple and let  yummy food do the talking more.
