Red-Velvet Cookies

       A moist and soft cookie that is perfect for the holidays! They really are DELICIOUS! An easy Red Velvet 3 Ingredient Cake Mix Cookie recipe, done in less than 25 minutes!

Ingredients:
1 Box Red-Velvet cake mix
1/3 cup Oil
2 Eggs
Powder sugar to roll cookies (optional)
Some white chocolate chips (optional)
Method:
* Pre-heat oven on 350* degrees.
* Mix red-velvet cake mix, oil and eggs in a mixing bowl.
 
* Make thick batter.
* Spoon into balls and roll in the powder sugar.
 
* Place on the cookie sheet leaving about 2" between cookies.
* Place the baking try in to oven.
* Bake them for 8-10 minutes until cookies gets brown slightly from edges.
* Sprinkle some powder sugar again if you want too or insert some white chocolate chips..

* Let them cool down on cooling rack..

* Enjoy red velvet cookies this holiday!!

Fruits & Yogurt Parfaits

    Healthy, delicious Fruits & Yogurt parfaits are layered with fresh peaches & oranges, vanilla flavored yogurt, some your favorite granola and fresh kiwis & pears for a lovely morning breakfast or afternoon snack or sweet treat for kids.!! Amazing, Hummmm!!!!

    Welcome back to another #foodiemonday #bloghop. Let's enter with this super healthy and kid's friendly recipe into today's # tricolor challenge. It's Republic Day for India. "May the Indian tricolor always fly high... Warm wishes on, the grand occasion of India's Republic Day." Today's recipe is totally dedicated to all Indians all over the world.

     There are endless possibilities in Parfaits' Recipe. I'm sharing my Daughter's favorite Parfait as a after school snack. She just love these combinations of fruits and yogurt with her favorite Granola bar. You can use any Granola or Cereal in this recipe but, I used Granola Bar(crumbled it) because my kids love the Granola Bar anytime. So just open your imaginations and try out this recipe with your favorite fruits, granola and flavored yogurt. Layer the ingredients into a glass container, starting with fruits and ending with fruits. I think the combination of peaches & oranges with kiwi & pear is especially tasty and pretty because it has sweet and sour flavors in it. When you combine this with soft vanilla flavored Yogurt, it will be heavenly delicious!
Ingredients:
For 2 servings:
1 cup Mix chopped kiwis and pears
1 cup Mix chopped peaches and oranges
1 cup Vanilla flavored yogurt
2 Granola Bars
some honey and color sugar for top of glasses
Method:
* Dip tops of glasses in to honey, then colored sugar. Set them aside.
* Crumble granola bars and keep on side.
* First layer mix of chopped kiwis & pears  in any glass.
* Pour vanilla flavored yogurt on it.
* Layer crumbled granola bar on yogurt.
* Layer mix of chopped peaches and oranges.
* Serve with spoon-they are good to the very last bite:)

Variations Note:
   As I said, this simple recipe has endless variations so here are some::
- Use plain yogurt in place of the vanilla yogurt.
- Use any fruit flavored yogurt in place of vanilla yogurt.
- Use any granola or cereal or oats in place of granola-bar.
- Drizzle some honey on cereals or oats or granolas - Use some honey, if you are using plain granola or cereal.
- Use other combinations of fruits.
-Use some chopped nuts on the fruits.
-Topping with chai-seeds or Flax-seeds on top.      Be thchange you want to see in this world & feel proud to be an Indian...

Red Velvet Cupcakes in a Jar

           "Red Velvet Cupcakes in a Jar"!  Yes, it really is easy and makes for such a visually appealing way to dress up cupcakes, not that cupcakes need to be dressed up as the name itself is cute and enticing! This recipe is specially for them who are really obsessive for cupcakes. Enjoy this Christmas to the fullest extent with these cupcakes.
                 I really hope you enjoy this recipe and gets you in the Christmas spirit.

Ingredients:
For Cup Cake;
2 1/4 cups all-purpose flour
1 1/2 cup sugar
1 stick (8tbls) unsalted butter(room temp.)
2 eggs
1/2 cup unsweetened cocoa powder
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 cup buttermilk
1 tbls red food color(liquid)
1 tsp vanilla extract
1 tsp white vinegar
For Buttercream Frosting;
1 cup softened butter
2-4 tbls milk
1/2 tbls vanilla extract
3-4 cups confectioners sugar
1/4 tsp kosher salt
Method:
For Cupcakes;
* Pre heat the oven to 350*F.
* Place the paper liners on cupcakes baking tray.
* Take a mixing bowl.
* Sift together the all-purpose flour, cocoa powder, baking powder, baking soda and salt.
* In another bowl, combine the buttermilk, food color, vinegar and vanilla extract.
* In a big bowl or electric mixer fitted with the paddle attachment, beat the butter and sugar on medium speed for about 1 min.
* Add the eggs, one at a time, and beat until combine, on low speed.
* Add some dry flour mix and buttermilk mix one by one and some by some.
* Mix until all combined.
* Make sure the batter is mixed well.

* Scoop the batter into cupcake cups with spoon or ice cream scooper.
* Bake for 10-15 minutes, until a toothpick inserted in the centers come out clean.
* Make sure do not over bake.
* Cool completely on wire rack.

For Buttercream Frosting;
* Beat the butter with an electric beater for a few minutes.(until creamy)
* Add 3 cups powdered sugar and beat on low until the butter has absorbed the sugar.
* Add vanilla extract, salt & 2 tbls milk and beat again on medium speed.
* Beat medium - high speed for about 3-4 minutes.
* If  the frosting looks too stiff than add some milk.
* If the frosting looks too loose, than add some sugar.
* Keep it in fridge for a while.
Arrange in jar;
* Once the cupcakes cool down, place 1 cupcake in a jar.
* Put a layer of frosting, with the help of decorative tip.
* Take another cupcake and place on frosting.
* Repeat the steps as many times as you want.
* Sprinkle some crumble cake on top of frosting.
* Cover the jar with lid and package however you like!

      It will be heartbreaking to eat, as it is so pretty, but it is so yummy!
  Easy right? I know, if I can do it , than you can do it too. Try it for sure.

        Decorating your home during Christmas can be a lot of fun, especially when done with your loved ones. It is a great way to bond with family and friend. Colorful festoons, fairy lights, snowflakes cutouts, and ribbons can make the atmosphere festive.

So, work up your imagination, and create magic with Christmas decorations.




 It's beginning to look a lot like Christmas soon the bells will starts, and the things that will make them ring; is those melodious carols that you will be singing right within your heart.!!!

The room is inviting,happy, light-filled and cozy. I've always felt was important is to really remember what Christmas feels like through the eyes of kids. It's Magic. It's beautiful with lots of sparkling lights all around. Collecting all the feeling at one place and sitting by the cozy fireplace is no where else but my, the living room!




Christmas is a great time for extra hugs and cuddle. 
Let's move forward to the dinning area. Keep dinning table sober & simple and let  yummy food do the talking more.
