Fiesta Roll-Ups

           "Keep Calm and Picnic On.."
    Here, I'm back with some awesome bits which are great for summer picnic or even great for Kid's school lunch box. Packing a picnic is kind of like packing lunch. Sure, you could make a meal out of baby carrots and chips, but that's no fun.;) For some of us, eating outdoor is rare treat, so why not make it even more special by packing a rear recipe.? - Fiesta Roll-Ups: portable, best served cold or at room temperature, and easy-peasy to make ahead in no time..

Ingredients::
4 large flour tortillas (Burrito sized tortilla)
8 oz cream cheese (room temp.)
1/2 cup cheddar and american mix shredded cheese or Mexican cheese
2 tablespoon chopped bell-peppers(any color)
2 tablespoon chopped onion
2 tablespoon chopped lettuce
2 tablespoon chopped cucumber
2 tablespoon chopped green onion
1 tablespoon chopped tomatoes(no seeds)
1 tablespoon chopped cilantro
1 tablespoon pickle jalapeƱo
1 teaspoon crushed garlic or garlic powder
pinch of Salt
1/2 teaspoon crushed black pepper
1 teaspoon Taco seasoning
Method::
* Mix all the ingredients (except Flour Tortillas) in a big mixing bowl.
   
 
 
* Take one flour tortilla and spread this cream cheese mixture evenly all over on tortilla.
 
* Roll up tortilla tightly.
 
* Chill in the refrigerator for half and hour. (optional)
 
* Slice the chilled, rolled tortillas into 3/4' in slices and arrange on a large serving platter.
 
* Perfect bites for Picnic.:)


Variation Notes:
* Use bread slices instead of Tortillas.(roll the bread slice and spread the mixture and roll)
* Use tomato or spinach tortillas for color roll-ups.
* Use your choice of vegetables with cream-cheese, like olives, carrots, cabbage.
* Great for Kid's school lunch box.

Sabudana Thalipeeth (Pearl Tapioca & Potato Pancake)

    There are 5 Navratri but commonly 2 Navratri are celebrated. Chaitra Navtarti is the very first one. Chaitra Navratri, also known as Ram Navratri, Vasant navratri and some people(like me) also refer it as Spring Navratras. There is a popular belief that the fasting during Chaitra Navratri is to prepare the body for the ensuing summer season. In these 9 days of carnival, nine forms of Durga Maa are worshiped. Whatever form anyone worship, whatever ritual anyone follows, the ultimate goal is to seek blessing and pay reverence to Maa Durga. During these 9 days of fasing, devotees follow strick vegetarian diet and consume Phalahari food. Whenever we have a fasting day coming up, the most commonly used ingredients is Sabudana or Sago Pearls or Pearl Tapioca. Why not try my following recipe,"Sabudana Thalipeeth" this Chaitra Navratri and make it a healthy and happy Navratri.!! Jai Mata Di!

Serving for: 2
Ingredients:
1 cup Sabudana or Pearl Tapioca
2 large boiled and grated Potatoes
1/2 cup slightly roasted crushed Peanuts
1 teaspoon Cumin seeds
1-2 tablespoon Green chili-ginger paste
1/2 teaspoon lemon juice
2 tablespoon chopped Cilantro
Rock salt or Sindhav Salt to taste
Some oil or ghee.
Method;
* Wash and drain Sabudana, sprinkle a little water and keep it covered for about 40-60 minutes.
* Transfer soaked Sabudana into a mixing bowl.
* Add grated potatoes, green chili-ginger paste, cilantro, cumin seeds, lemon juice, crushed peanuts and Sindhav salt.
* Mix well and knead well.
* Heat a pan or tawa.
* With wet hands take a portion of the sabudana mixture and spread it on some plastic or on wax-paper.(try as thin as you can)
* Make a hole in a middle or make a few holes all over.
* Place it on hot tawa.
* Put some ghee or oil in the holes and also apply all around on the Thalipeeth.
* Flip over when the underside is light golden and cook till the other side is cooked golden too.
* Serve hot with Yogurt or chutney of your choice.
* Enjoy!!

Detox Blueberry Salad

        This Detox Blueberry Salad recipe, helps you lose weight, increase your energy, and the most importantly, reset your frame of mind, end craving and flush out the toxins in your system so it is easier to eat healthy and live better... So when I saw gorgeous & fresh Blueberries at the farmer's market in my town, I couldn't help but imagine them  pairing perfectly with some yogurt,nuts and greens. And So, this Detox Blueberry Salad was born..:)Look at the color! Swoon....
   A healthy and interesting salad recipe for #foodiemonday #bloghop #nocooknobake challenge.

     I think you guys are going to love this salad. It's Summery, Healthy, Crisp, Fruity, Savory-sweet, Satisfying, Quick, Plant-based & Seriously delicious...
 Ingredients:
For salad::
3/4 cup fresh blueberries
3/4 cup finely diced Kale, Spinach & Chard mix
 1/2 cup finely diced red cabbage
1/4 cup finely diced cucumber
1/4 cup finely diced avocado
1/4 cup finely diced lettus
1/4 cup finely diced red onion
1 tablespoon any color diced bell-pepper
2 tablespoon finely diced beetroot
For dressing::
3-4 tablespoon yogurt(prefer low fat)
1 1/2 tablespoon extra virgin olive oil
1 tablespoon lemon juice
1/2 to 1 teaspoon sea salt or salt to taste
Some freshly ground black pepper
For garnish::
1 tablespoon toasted diced almonds
1/2 tablespoon flax seeds
Method:
For dressing;
* Place all dressing ingredients in a bowl and mix very well.
* You may place all ingredients in a blender and pulse to obtain a smooth liquid.
For Salad;
* Place all the salad ingredients in a large bowl and toss to combine.
* Pour the dressing over the salad and mix to combine.
* Top with toasted almonds and flax seeds.
* Serve it and enjoy it.
    Detox Blueberry Salad--The ultimate cleansing salad, filled with detoxifying red cabbage, blueberries, red onionspinac-kale-card mix and avocado, as well as a tart dressing made from EVOO and lemon juice. If I could eat only ONE salad for the rest of my life, this would be it..:) End craving, lose weight and reset your body chemistry, so it is easier to eat and drink healthier and live better.

Lemon-Cherry Berry Spa Water

      My Lemon- Berry spa Water is my bestie these days..:) Lemon-Berry Spa Water counts as my daily water intake and helps make the water more interesting..i.e. more easy to drink in hot summer days!!!
      This water is also great for flush fat:), good for Detox our body.. It's just easy-peasy to make too. Just combine all ingredients with water and chill it overnight in the refrigerator, drink throughout the day...


Ingredients:
1 cup berry mix (blueberry, dark cherry, red cherry, strawberry) frozen or fresh
1 lemon sliced
2-3 leaves of fresh mint
3 cups water
Some ice if needed
Directions:
* Add all ingredients to large glass or in to a pitcher.
* Cover lid and all to chill overnight in the refrigerator.
* drink throughout the day.
* Add some ice cubes if want more cold.
* Cheers!!

       Drink more H2O with Detox Spa water. It helps you to Maintain a flat belly.

Dhaba-Style Tawa Pulao

        Dhaba-Style Tawa Pulao--- To delight in the taste of authentic Tawa pulao, one has to visit the chaat vendors carts ot at the road-side dhabas. Since this is an easy recipe to replicate, we can re-create the same flavors at the home. It is very easy to prepare and tastes simply irresistible.. I know, almost everyone knows how to make Tawa Pulao but I insist you all to try this recipe once. I'm 100% sure, you will be stick on this recipe forever..:) Try this version of Dhaba-Style Tawa Pulao today and make a hit dinner tonight..!!

Ingredients:
2 cups boiled(cooked) rice
3/4 cup grated cabbage
2 peeled and chopped tomatoes
1 chopped tomato(no peeled Off)
1/4 cup boiled peas
1 tablespoon oil
1/2 tablespoon butter
1/2 teaspoon cumin seeds
1/2 cup chopped bell-pepper
1/3 cup chopped onions
1 tablespoon mix of cashews and raisins
1 teaspoon red chili powder(adjust according to taste)
1/2 teaspoon red chili and garlic chutney(optional)
1/4 teaspoon turmeric powder
1 tablespoon dhanajeeru(cumin-coriander powder)
1 1/2 tablespoon pavbhaji masala
1 teaspoon lemon juice
Salt to taste
2 tablespoon small pieces of paneer(optional)
1 tablespoon cilantro
1 teaspoon butter.
Water as needed
Method:
* Heat the Pan.
* Add grated cabbage, peeled and chopped tomatoes and boiled peas.

* Add 1/4 cup water and mash the vegetables with help of hand masher.

* Cook the vegetable until they gets cook well. * Add some water if needed.
* Keep the cooked vegetable on the edges of tawa.
* Add oil and butter on the middle of tawa.

* Add cumin seeds, cashews-raisin and onions.* Cook for a minute and add bell-pepper, chili-garlic chutney, red chili powder, turmeric powder, dhanajeeru and pav-bhaji masala.

* Mix well and cook for a minute.* Now mix all vegetable with this and stir and cook.
*Add salt, lemon juice, paneer and cooked rice.

* Mix all well.* Add one chopped tomato and cilantro and mix well.

* Add 1 teaspoon butter and mix.* Cook on very slow flame for about 2-3 minutes.
* Turn off the stove and transfer Dhaba-Style Tawa Pulao on serving plate.
* Sprinkle some pav-bhaji masala and cilantro and serve.
* Enjoy the authentic taste of Tawa Pulao..

Indian-Style Tapenade

   "Tapenade"..Don't you think, this sound so interesting.? Yes, it does.. Tapenade is a popular food in the south of France. Generally eaten as spread on bread. Tapenade's base ingredient is Olive.. Olives and capers are finely chopped, crushed or blended. Olive oil is then added until the mixture becomes a paste. Of course, you all know me well now, without any fusion touch this girl doesn't have any fun:) Cuisines like fusion, are not categorized according to any one particular cuisine style and have played a part in a number of innovations. So no limitations or no rules or regulations, just follow your taste and enjoy this unique and healthy recipe of "Indian-Style Tapenade!!
      Basically I changed almost all ingredients from traditional recipe of Tapenade. But I insist you all to try at least once, and you will fall in love with this healthy and jiffy recipe.. So let's begin shall we...

Ingredients:
1 loaf French Bread
1 cups boiled moong(green gram)
Salt to taste
1/2 cup mix of green & black chopped olives
2 tablespoons finely chopped onions
1 tablespoon finely chopped garlic
1 teaspoon finely chopped green chili
3-4 tablespoons extra virgin olive oil
1/2 teaspoon lemon zest
2 tablespoon chopped cilantro or chopped parsley or both 1tbl each
1/4 teaspoon crushed dry red chilies
1/2 teaspoon lemon juice
Some more extra virgin olive oil and crushed red chilies for garnishing. Adjust all spices according to your taste.
Method:
* Heat the pan with 1 1/2 tablespoon of extra virgin olive oil.
* Add chopped onions, chopped garlic, chopped black & green olives.
* Mix well for a minute.

* Add boiled moong along with salt and mash them lightly.
* Add lemon zest and mix.

* Turn off the stove and transfer the mixture into a bowl.
* Add chopped cilantro or chopped parsley into the mixture.
* Add crushed dry red chilies, lemon juice and remaining 1 1/2 tbls extra virgin olive oil.
* Mix well.

* Cut diagonal slices of French bread.
* Toast them very lightly. * Arrange bread slices on a serving platter.
* Spread the moong tapenade mixture over each slice.

* Drizzle extra virgin olive oil and sprinkle some crushed red chilies over them.

* Serve and Enjoy the unique Indian-Style Tapenade...

 So, You've got an amazing and fancy but easy appetizer!! Doesn't that look SO delicious?

Blue Hawaiian Mocktail

      Holi, the festival of colors is finally  here!! And as you know festivals go hand in hand with food and frenzy.  Tame your festival fever by cooling down with this colorful Blue Hawaiian Mocktail. Easy, simple, refreshing and of course virgin drink to quench your thirst with all the Holi hubbub!!

Ingredients:
8 ounces Blue fruit punch or Blue raspberry kool-aid
2 ounces Pineapple juice
1 can Sprite or 7up
Some ice cubes.

Method:
* Place the blue fruit punch or blue raspberry Kool-Aid in a jar.
* Add pineapple juice in it and mix well.
* Pour 5 ounces of blue fruit punch and pineapple juice mix in the champagne glass or any other glass.
* Then add  7up or sprite until full.
* Add some ice cubes.
* Enjoy the Blue Hawaiian Mocktail.
