Think about Chipotle veg. rice bowl on sizzler plate... Yes, sounds like heaven for me. A Chipotle inspired veg. rice bowl, that's bursting with spices and flavors and is healthier than take-out! I'm in love of this recipe. No, but really, with fresh veggies and rapid preparations with chipotle drizzle, what's not to love? Plus, this is completely customized to add in your favorite ingredients. Or if you're like me, you can keep it full of veggies. There's plenty of goodies to go around here!

Ingredients:
For Rice;
2/3 cup rice(you can use brown rice)
2 cups water
2 tbls chopped fresh cilantro
2 tbls oil
salt to taste
1 tbls lime juice
1 tbls lemon juice
1 tsp chipotle peppers sauce.(optional)
1/2 tsp smoked paprika powder
For Guacamole;
2 peeled and seeded avocados
1/2 seeded and miced jalapeno pepper
2 tbls chopped onions
2 tbls chopped fresh cilantro
salt to taste
1 tsp lemon juice
For Corn Salsa;
1/2 cup corn
2 tbls chopped onions
1 tsp lemon juice
1/2 tbls chopped jalopeno peppers
1 tbls chopped cilantro
For vegetable;
1 cup sliced onions
1 cup sliced bell peppers(use all color)
1 tbls olive oil
1 tbls lemon juice
1 tsp chopped chipotle pepper(i used san marcos can)
1 tsp smoked paprika powder
salt to taste
For Black Beans;
1 cup boiled black beans
1 tbls oil
1 tsp garlic paste or garlic powder
1 tbls chopped onions
1 tbls chopped chipotle pepper(use portion according to your taste)
pinch of salt
For Topping;
2-4 tbls pico salsa
1/2 cup shredded mexican cheese
some shredded lettuces and green onions mix
Sour cream (optional)
Method:
For rice;
* Boil the water in a pan.
* Add rice & salt and cook till rice are properly done.
* Turn off the stove and fluff the rice with fork.
* Add oil and let it cool down well.
* After rice competently cool down, add lime and lemon juice and cilantro in it and mix very well.
* Add chipotle pepper sauce and smoked paprika powder and mix.
For guacamole;
* Combine all the ingredients.
* Crush avocado with help of fork and mix all.
For Corn Salsa;
* Mix all the ingredients in the bowl.
For black beans;
* Heat the oil in the pan and add chopped onions, garlic paste and chopped chipotle pepper init.
* Add cooked black beans and salt and mix.
* Turn off the stove and mix well.
For vegetable;
* Heat the oil in pan and add sliced onions and bell peppers in it.
* Add chopped chipotle peppers, smoked paprika and salt.
* cook for couple of minutes.
or
* Heat the oven proof skillet, and preheat broiler.
* Saute onions and bell peppers with salt and chipotle chopped pepper with smoked paprika until, vegetables begin to form blackened edges.
For Assemble:
* Heat the sizzler plate well.
* Arrange some Lettuce leaves on it.
* Put desired amount of rice on a hot sizzler plate.
* Add black beans on it.
* Add vegetable on it.
* Add corn salsa and pico salsa.
* Add guacamole, sour cream and shredded mexican cheese along with some lettuce and green onion mix on top.
* Serve it with love and enjoy it.
Note: if u dont want to use sizzler plate, you may use just big serving bowl to assemble.
